Yeah there are a lot of fans that do that, and it's freaking irritating. There are also a fair amount of fans that think multi-shipping solves all problems and if you don't do it you're perpetuating wank... or something.

As for the second part, I don't really care why someone labels themselves a multishipper. If they say they're one, whatever that's fine with me. But that's why I don't consider myself a multishipper? For example I ship America from Hetalia with a few people, but not simultaneously. I like a few pairings as having occurred in the past, but just USxUK for WWII and beyond (thus it's my OTP).
