Because sometimes that's what happens in real life.
Sometimes you do love someone who doesn't quite love you back in the same way. And that's okay. "Victory" in stories, especially in stories aimed at kids and teenagers, needs to stop being equated with "got the guy/girl." Maybe just every now and again, even in a fantasy show, the first attempt at romance can just end with: "You really wanted it, you did All The Right Things, but you still don't get it. So you moved on and figured out how to be happy anyway. And maybe get a new love interest later."
(Plus, well, until--and maybe even after--their date, I kinda liked her and Bolin. The wacky character never gets the lead.)
Though I have to admit, it makes me love Asami that much more. That even after all that crap, she didn't have a Face Heel Turn for being the woman spurned. Because heartbreak? Just one more thing you deal with, now pass me my zappy gloves please.
