Crockpot Recipes?

Hello FS! I am hardup for cash for holiday presents so I'm attempting to make stuff. For my brother I'd like to put together a collection of super simple recipes he could make in his brand new crockpot. I plan to write them all down on recipe cards and put together a recipe box for him.

He is really picky and will not make things if they have too many ingredients or steps. He's been getting better about this, but baby steps. He eats lots of meats but not too many vegetables. He says he likes spicy foods but doesn't care for any Asian or Indian types of spices or flavors.

So far I've got 2 beef stew recipes, a taco type of meal, and salsa chicken thing. Anything you want to throw at me would be appreciated!

Oh damn it I appear to have deleted the email that had my mom's sloppy joes recipe in it. WINGING THIS SHIT, YO:

1 pound ground beef/hamburger. Cheaper is probably better, here.
1 cup ketchup
1 can Campbell's Chicken and Rice Soup. Lean version is okay, but the rice is key.
1/2 cup brown sugar (not sure about the amount. might be 1/3 cup)
Onion powder
Hamburger buns

1. Brown the ground beef in a saucepan. Drain the grease into something else (NOT YOUR SINK), set aside to throw away later. Put the beef into the crockpot.
2. Add ketchup, soup, and brown sugar. Stir it around a little if you want, not important. Dust the top of the whole thing with onion powder, it should look like Boston after that last blizzard went through.
3. Crock pot on low, 8 hours.
4. Put on hamburger buns, enjoy. Traditionally eaten at my house with Old Dutch Rip-L Chips as the side.


I'm pretty sure that's everything, although I really don't know about the brown sugar. Fukkit, should be good either way.

If the whole chicken is small enough to fit in the pot with liquid to cover, add the whole fresh chicken, can of tomatoes with the juice, an onion, a carrot, S&P and one potato in with it, and water to cover; leave overnight, pull out chicken and veggies in the morning (it will be falling apart), pull the meat off the bones, transfer the bones back to the crockpot, give it another eight hours, strain, add cooked egg noodles, bit of lemon juice, and you've got 1 meal of chicken & potato/carrot, pulled chicken for sandwiches or whatever else through the week, and chicken soup.

You need a fairly sizable crock to work this magic in tho.

Thank you! He has a rather large crockpot that my mother bought him for his birthday a few days ago, so I think this recipe should work.

Then your brother will also want to try a pot roast. 1/2 the liquid (b/c a lot of juices will come out of the meat) and use soy sauce / rice wine vinegar in equal proportions. A little pepper (all the sodium you need will be provided by the soy sauce), some fresh minced ginger and garlic to taste (I use a lot of each, personally, YMMV), 1/2 cup green onions, set it and forget it. Take the roast out after it's done (time will vary depending on the size of the thing), wrap it in tin foil (shiny side facing in) to let it rest, turn the crock on high to reduce the drippings/marinade for gravy, and throw the potatoes and carrots in to cook while this is going on (potatoes will thicken the gravy). Once the gravy's cooked (should be about 1/2 hour to an hour, depending on size of roast/crock), slice the meat, serve immediately.

Overnight pasta -- dump dry noodles, elbows, spiral, whatever strikes your fancy (don't use spaghetti or long noodles though, that's just a disaster -- lasagna is OK but break them up, first) into crockpot, add all veggies you want to cook with them (onion, tomato, red peppers, are usually the standard), tomato juice to cover, chili powder if you want spicy, salt and pepper if you don't, and one can of tomato paste. Whatever else you want to add, but always put in the tomato paste. Set before bed, pack your lunch in the morning. Add meat if you want it, but I never have done, so can't comment. Add parmesan after cooking.

My mother used to put a tin of tuna in hers, but I never liked it. :-P Your brother can add whatever can-o-meat he wants, and it shouldn't be terrible.

I like making spaghetti sauce in the crock pot. I don't have a recipe, though, because I made up my own and never wrote it down. I'm also frequently experimenting or changing things based on what ingredients I happen to have in my kitchen. It usually goes something like this:

can of diced tomatoes (or frozen diced fresh tomatoes)
can of tomato sauce and/or can of tomato paste (good for making it extra-tomato-y)
1 white or yellow onion (will need to chop and saute this until it starts to get soft before adding it to the crock pot, or it will still be kind of crunchy even after cooking for 8 hours)
garlic, basil, rosemary, and oregano
maybe some black pepper, a little brown sugar, and a splash of red wine

I used to brown some ground turkey with the onion, but I usually just make meatless sauces now.

I usually add things like chopped spinach (frozen or fresh) and kale to the sauce, along with artichoke hearts, olives, and red bell pepper.

I usually mix it all up in the evening and cook it on low overnight.

That's very rough, so finding one online might be better, but some kind is crock-pot pasta sauce is a good staple recipe to have. It can feed a group or be divided into single serving containers and frozen for fairly easy meals - just cook some pasta and heat up the sauce!

Pineapple chicken!

Ingredients:
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup light soy sauce
2 pounds chicken breast tenderloins.

Directions:
Add all ingredients to the crockpot and cook on low 6-8 hrs and they should just fall apart. Enjoy!

Pulled pork (this might be too many ingredients, but it's really good if he's feeling ambitious):
Rub smoked paprika, cayenne pepper (or chipotle pepper is what I used) and garlic powder onto all sides of a pork shoulder.

In a deep skillet or sauce pan, soften half a sliced onion and two sliced carrots (not for eating just for flavoring, so he can leave the peel on) in a glug of oil (also some fresh garlic, if he wants to). My onions got burnt, and personally, I think it was for the better. Add a small can of tomato puree and about a quarter cup of brown sugar. Mix it up and add a bottle of beer. Fill the empty bottle up with water, add that and bring it to a boil.

Put the pork roast and the contents of the skillet in the crock pot and let it cook for 12 hours.

Breakfast casserole (super easy and can be scaled down if he's not feeding an army)
Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
Salt and pepper
16 oz. bag shredded cheese

Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly).
4. Add the milk.
5. sprinkle in the ground mustard.
6. Add plenty of salt and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Add cheese.
10. Mix well.
11. Pour the egg mixture evenly over everything in the crock pot.
12. Turn the crock pot on low for 6-8 hours.

Baked chicken:

Take one whole chicken, remove gizzard, neck, etc. from cavity (if included)
Rinse entire chicken (inside and out). If you want to remove the skin, do so at this time, otherwise, leave it on.
Place chicken in crock pot, open side up
Into the cavity, toss in:
Chopped celery
Chopped carrots
About two teaspoons of salt (or less - note: Can use onion salt or celery salt for more flavor)
About a teaspoon of pepper (more or less to taste)
Put lid on the pot, turn pot on low, leave alone for appx eight hours.

The chicken will fall apart completely, so you can use the meat for nearly anything (we would debone the chicken and make barbeque sandwiches, chicken salad, chicken and noodles, etc.).

Other additions:
1. Add a cup of red wine for seasoning, or
2. Mince onions and garlic, cook in butter or olive oil on the stove until the onions are clear, rub on chicken inside and out before chicken goes into the crock pot, or
3. Chop potatoes (sweet or white) and use as a base under the chicken, add one cup broth (chicken broth, wine, beer, melted butter) for additional flavor flavor.

Not sure if you already have this one, but it makes a rich beef stew with lots of gravy:

2-3 lbs. chuck roast
1 can cream of mushroom soup
1 envelope Lipton's dry onion soup mix
1 cup red wine (cheap is fine!)

Optional:
8 oz. white mushrooms, sliced
2-3 carrots, sliced
2-3 potatoes, cubed


Toss everything in the crockpot for 8-10 hours on low. You can serve it over noodles, rice or mashed potatoes.


Mabel Hoffman has written what a lot of people consider to be THE classic cookbook about crockpot cooking. You might want to Google her name or check and see if your local library has any of her books.

An old roommate had a recipe-a-day calendar by CrockPot. I'll put a few recipes over the next few comments. I love Mexican food, and am learning more Spanish cooking, so it's pretty heavy on those, for this spicy stuff.

Carne Rellenos

Like Chile rellenos, but stuffing steak, instead:

1 can (4oz) whole green chiles, drained
4 oz cream cheese, softened
1 beef flank steak, ~2lbs
1.5 cups salsa verde

1) Slit whole chiles open along one side and stuff with cream cheese
2) Lay steak flat and score one side
3) Flip and put stuffed chiles along steak, and roll up and tie with kitchen string*.
4) Place steak in CrockPot, pour in salsa; cover and cook on Low for 6-8hr, High for 3-4hr, or until done to taste.
5) Remove, cut, serve with sauce.

*I used twine or dental floss, too. Just not the minty kind, as it can leave an after taste, sometimes.

Paella

4 cups boneless, skinless chicken breast, cubed
1 cup chopped onion
1 cup chopped tomatoes
4 tsps chopped pimentos
1 tsp salt
1 tsp black pepper
1/2 tsp dried oregano
1/4 tsp saffron
4 cups cooked rice

4 cups shucked whole clams of canned clams
1lb medium raw shrimp, peeled and deveined
1 cup (or 2 cans, 8oz each) lobster meat
8oz scallops

1) Place chicken, onion, tomatoes, pimentos, salt, pepper, oregano, saffron in CrockPot. Cover and cook Low 6hr or High 2-4hr.
2) Add rice and seafood. Cover and cook on Hig for 15, or until shrimp are opaque.

I'm not a huge seafood fan, so I skip that part and add more chicken and a variety of other veggies. And tons of pimentos.

CrockPot's Chili

2lbs lean ground beef
1 Tbsp each
salt
cumin
chili poweder
paprika
dried oregano
black pepper
2 cloves garlic, minced
1 tsps red pepper flakes
1/4 tsp ground red pepper
1 Tbsp vegetable oil
3 cans (10.5 oz each) diced tomatoes with green chiles
1 jar, 16oz, salsa
1 large onion

1) Combine ground beef, salt, cumin, chili powder, paprika, oregano, black pepper, garlic, red pepper flakes, ground red pepper in a large bowl
2) Heat oil in a large skillet over medium heat; brown beef, etc.
3) Drain and discard fat, add tomatoes, salsa, onion, mix well. Transfer to CrockPot.
4) Cover, cook Low 4-6hr!

1lb ground beef
2 small onions
1 bell pepper
1-2 fresh tomatoes
1 can crushed tomatoes
3-4 cloves garlic, minced
1 Tbsp cumin
1 Tbsp coriander
1 Tbsp chilE powder
1 Tbsp paprika
1 tsp cayenne
1/2 tsp salt*
1 Tbsp brown sugar/honey*

1) Brown meat
2) Cook veggies in beef fat (I like to carmelize the onions)
3) Put meat, veggies, crushed tomatoes, and spices in CrockPot. Cover, cook Low for 2+ hr. It's really to heat everything through and let the spices set, so timing in flexible.

*Optional, depending how you want it to taste.

My Enchiladas

1/2-1lb chicken, beef, or pork
2 small onions
1 bell pepper
2-4 cloves garlic, minced
3 medium jalepeños
cheese
"taco-size" tortillas
2-3 cans Target's Red Market enchilada sauce (shockingly tasty!)

1) Cut meat into cubes or strips, cook through in skillet.
2) Halve jalepños, scrape and discard all seeds. **Wash your hands!**
3) Put veggies, 1-1 1/2 cans of sauce, and meat in CrockPot. Cover, cook on Low for 3-5hr.
4) Grate cheese
5) Put meat, veggies, cheese on tortillas and roll up. Place them into a small baking pan, and pour remaining sauce over them (including anything left in the CrockPot)
6) Cook at 350F for 15-20min, to give the tortillas some crispy ends and get the sauce to sink in.

My Beef Stew

1-2lbs beef, cubed
3-4 carrots, or 1 bag baby-cut carrots
2 small onions, diced
2 baking potatoes, cubed (same size as beef)
1 can beef broth

1) Put everything in CrockPot, add water until everything is just covered
2) Cover, cook Low 6-8hr, High 4-6hr

You can add other spices and herbs to taste, but this is the easiest thing I know how to make, and while it's delicious, it's also a great jumping-off point!
