Everyone should read Jerome K. Jerome. I was astonished to see how underappreciated he is; his humour is pure gold, and bits from Three Men in a Boat never fail to cheer me up.

On a related note (apparently I'm in love with happy!literature right now), Pushkin is one of the few rare poets who can combine loftiness with a good, healthy, non-forced sense of humour. His works (both poetry and prose) are easy to read, and (in case of poetry) have catchy, fun metrical/rhyme structure.
