Well, it's understandable that it's all teen stuff when teenagers are apparently a profitable demographic, but I don't see why teens might not be interested in watching adults do the same things, not to mention plenty of adults are already into watching/reading the genre. And I specifically wouldn't mind aging up the vampire fad now and then, since semi-immortal beings getting with teenage girls does get creepy if you think about it too hard.

They did that with Angel, giving him his own show and all adults to play with. And they're doing the same thing with The Originals, aren't they? (I never got in to Vampire Diaries, so I'm not sure about The Originals, but I thought that was the premise of the new spin off.)

I preferred reading about adults when I was younger. Because I was a person my age! I didn't wanna read about that! It was booooo-ring! :P

Since becoming an adult myself, I just seek out media where people have adventures that I probably won't have myself for whatever reason.

If a teenager gets with a vampire, at least they have their inexperience to excuse their stupidity. If the vampire's 500 years old, what difference does 10 more years make?

I think that age should factor into consent not because of age differences but simply because kids can't consent. Theoretically if you're an adult you can consent to being with somebody much older than you, whether they're 25 years older or 250 years older - preferably taking into account how complicated the relationship could be, but it's your business, you're an adult.

Once they're past consent but while they're still stupid and young. That's when vampires would strike, because that's when most sexual predators prefer to strike.

On the other hand, would most vampires care about ages of consent? They suck people's blood to live, why stop there?

I have no idea why I'm replying now except that I generally dislike vampires in fiction. They could be so much better if the story just accepted them as irredeemable thugs. But then there would be no dramatic tension so they wouldn't get written at all.
