Roasted chicken and vegetables with thyme butter. Super easy, but really delicious. I made it for my sister, her bf, and roommates because they almost always cook something amazing when I visit so I wanted to cook for them. And it was a success as always.

My specialty dish is probably Moroccan rice with spice-rubbed portobello mushrooms. It's a little time-consuming in the prep department, but fairly simple to make. It's my go-to vegetarian party dish.

I will tell you my secrets! This is the rice recipe, although I will tweak it occasionally. Vegetable stock if there's vegetarians eating it, obvs. Sometimes I do it with half the amount of raisins and chopped dates for the other half. And once I did it with a little saffron and half the amount of turmeric. So divine!

For the mushrooms, clean some big portobellos and remove the stems so they cook evenly. Make your spice rub of around 1TB chili powder, 1TB cinnamon, 1TSP cumin, 1TSP turmeric / PER 'SHROOM (adjust to your preference). Slather 'em with olive oil, then rub with spice mixture and saute in a pan with a little more olive oil. Don't do more than 2 big mushrooms at a time, or one if you only have a small pan. Finish with some S&P and serve with the rice.
