I really do wish there was just one Holmes actor among the 100 adaptation who actually is Holmes' type, tall, thin hawk-like nose and dark hair.

That would be Jeremy Brett. Look at him in seasons 1-2.

I have watched them and I do think he's a great Holmes but I'll still have to disagree there.
