Okay, so if we're talking songs specifically about driving, you gotta start with Springsteen. Obvious choice is Born To Run; I think my choice for the overall best is The Promised Land ("On a rattlesnake speedway in the Utah desert / I pick up my money and head back into town / Driving cross the Waynesboro county line / I got the radio on and I'm just killing time"), just a great song with a really good vibe. There's a million other Springsteen songs that work as well - Thunder Road etc.

Could also add Paul Simon's Graceland even though it's about a bus journey, not a drive. Replacements "Can't Hardly Wait" is a classic.

More generally, for songs that don't actually talk about driving, the combined oeuvres of Credence Clearwater Revival and the Allman Brothers Band (with special reference to Lodi, Bad Moon Rising, Ramblin Man, and Jessica which are absolutely necessary). Really, all those great classic rock songs from classic rock bands - put on The Band, put on Dylan, put on Sympathy For The Devil. Classic rock, southern rock, good country songs. Johnny Cash. Tom Petty is good. Bowie can be good. Anything with that kind of feel.

I don't like that song personally but only because it makes me sad. There's something so melancholy about it...

But on the Simon & Garfunkel note, you also could use America. Which is a great song.
