Note: I never saw a single ep of the show, but I know from fandom osmosis that a) it's a very popular slash ship and b) apparently people thought it was problematic/distasteful because of power imbalance, or maybe just because Hannibal is a creep who eats people

I'll go ahead and say "yes" it's canon that Hannibal and Will love each other, but the exact nature of that love is kind of up in the air. (The show's creator Brian Fuller calls their story "a love story", and has said several times that they love each other though their relationship has never been physical. I definitely feel like they have romantic feelings for one another, but at least for Will that's something he struggles immensely with and fights against. He occasionally takes pleasure in telling Hannibal he doesn't want to see him or doesn't like him, but when it comes down to it...he doesn't mean it. He wishes he did; his life would be so much better that way, lol.)
They have never actually said the words "I love you" to each other, though they've suggested as much to other characters. Hannibal had scenes with Bedelia where he does this (can't remember the exact line, but it was something like, "With respect, you can't help who you fall in love with"), and Will had a scene with Reba in the finale where he tells her there isn't anything wrong with her for having loved Dolarhyde. It might be unspoken, but the intent is that Will loves Hannibal and knows exactly what she's going through. Bedelia also suggests (multiple times) that Will is Hannibal's bride and Will ends up asking her "Is Hannibal in love with me?" She says yes.
So there's loads of suggestion (this isn't even the half of it, tbh; the two had a sort of surrogate daughter, Hannibal planned for them to run away together at one point and Will admits wanting to) and I do think it would be extremely difficult to not see it, but there's no kissing or conventional love confession. (I mean, Hannibal leaves Will a dead body shaped like a heart, so there's that. They also hug and nuzzle in the finale after killing together while Hannibal wears an ecstatic look on his face.)
They're canonically obsessed with each other and drawn to each other in the most fucked up way possible and absolutely everyone around them sees it, but I'm not sure at what point you would even say "They're canon". (For instance, some people were upset they didn't kiss at the end of the finale. Apparently the actors did in some takes but it was cut out because Brian felt it looked a bit too much like fanservice. I'm fine without the kiss because everything else about the scene is incredibly intimate and weirdly sensual, but some people want a good old fashion lip lock.)

More spoilers, for season 2
In the season two finale Hannibal and Will looked deeply into each other's eyes, Hannibal stroked Will's face then cupped the back of his head and stabbed him in the stomach. After Hannibal pulls him into his arms, hugs him tightly and speaks to him while almost stroking his hair. His words aren't angry, they're disappointed and hurt, but his hold on Will is surprisingly... Nurturing, considering what just transpired.
There are other examples too, almost as fucked as this one. (The one where Hannibal cleans blood from Will's hands was almost soothing...)
This damn show.

I mean, I understand if people don't ship it because this is one of the most screwed up, disturbing relationships I've ever seen (and I'm amazed that some of these scenes aired on NBC in the first place), but even so there's lots of really complex emotions between the two and there's a heavy air of intimacy and longing during some of their scenes. To me, their interactions just make more sense if you think of them as both harboring romantic feelings for each other, there's just no consummation until they kill together. (Which for them is better than sex anyway, I imagine.)

Typing out that comment (And then remembering all the other shit I couldn't type out because I either didn't know how to explain it or didn't want to take that long) is making me realize just how perverse and dark these two are.
Not that I didn't know it before, but looking back over the whole series like this...
Wow, this is one intense relationship.
I think I'm gonna rewatch the whole thing.

It probably should be horrifying, but there's something incredibly humorous (And equally scary at times) about the way Mads plays Hannibal. The only way I even know how to explain it is that he's so inhuman and morally deficient that you almost have to accept that he's like another species. That devil comparison is very fitting.

Just the way Will is in general pointlessly grappling with Abigail's neck, his hands flailing around, unable to help her or keep her from bleeding out, and Hannibal calmly, coolly steps over, kneels, and puts his hands on her neck, one underneath, and one on top. A surgeon's hands, and he knows exactly where to press, and how to best keep the arteries from gushing. And Will just sits there shaking and shaking.

Poor Will was so traumatized and freaked out and Hannibal walks in without a care in the world, takes over and saves her effortlessly.
While Will was just like WHAT THE FUCK THIS IS AWFUL WHAT AM I DOING WHERE DO I PUT MY HANDS THESE'S SO MUCH BLOOD
Oh, this show.

Now if that love is romantic or not is a bit more questionable, but the feeling I get from the majority of their scenes is a resounding "Yes". Now, that love might not be a healthy, happy love, but when one of the characters involved is Hannibal such a thing is impossible.

(Anonymous) 2015-08-31 02:32 pm (UTC)(link)In a recent interview discussing the finale Fuller was talking about the finale scene (for the finale) and how he nearly added a kiss because the actors were nearly brushing lips, and he wanted to add it because he felt the fandom wanted it, but he said it felt disingenuous to add it for that. He went on to say one character was ominsexual, and another heterosexual. And joked that after a six pack of beer who knows what would happen.
I feel that last part (about needing to be drunk for sex to happen) is really telling, and at least for Will's part it would never be canon because he's heterosexual.

And I mentioned that interview in my comment! I feel like Brian is pretty adamant about their relationship being a love story though, even though he seems to have trouble sticking to other details. (Maybe he can't make up his mind, idk.) Like, he says the song written for the episode is a love story, and that he specifically asked the artist to write a love song, then in another interview he says that Hannibal and Will definitely love each but he of course doesn't say it's a romantic kind of love.
Though here he says "It felt like we had to s–t or get off the pot, ultimately, because there had been so much going on between these two men that when Will asks, “Is Hannibal Lecter in love with me?” it is very much about death and the romance between these two men. There is a quality to connections that go above and beyond sexuality. You can have this intimate connection with somebody that then causes you to wonder where the lines of your own sexuality are. And we didn’t quite broach the sexuality. It was certainly suggested, but the love is absolutely on the table. There is love between these two men, and confusion between these two men. We had to articulate it, and the idea for a [potential] Season 4 was an interesting continuation of that, as well as a subversion of it at the same time. So it’s strange to look at [this week’s episode] as a finale, because part of me believes that the most interesting chapter of Will Graham’s story is yet to be told."
Now this doesn't guarantee that he would explore such a thing, but sometimes people do realize they are romantically interested in or attracted to someone they previously wouldn't have considered.
