I prefer fluffy but will read messed up as long as there is no non-con. Incest for me is anything closer than cousins.

However, I don't mind it if there's an incest pairing that's written as fucked up and unhealthy or weird and slightly awkward and one sided... or generally anything else that seems realistic. I just find that to be interesting writing if it plays with character psychology well.

I definitely like fluffy, romantic stories and not messed up ones. Incest to me is anything that has a strong family-element to it, so non-blood can read as incestuous depending on the characters/fandom.

mostly i got into it because it's like what happens in canon but with an added sexual element to make it even more messed up.
and i totally count adoption as incest, people like to argue that it isn't because genetics... but that's not what the problem with incest is to me... it's all about the power/relationship dynamics

Let's see which ones I can remember...
Peter/Nathan was one of my first, from Heroes. The actors had an insane amount of chemistry and the show didn't help with the way some of Peter and Nathan's scenes were written. I vaguely remember a scene where (I think) Nathan was looking through a box of pictures, and there was like one picture of him and his wife at their wedding, and a million of him and Peter looking like a happy couple. It just made me laugh. I never read all that much fic, but I liked their relationship being a combination of fluffy and messed up; it felt true.
Then Dean/Sam from Supernatural. Again, the chemistry, the dynamics (co-dependent, unresolved childhood issues, the insane things they'll do to protect one another, etc), all of that appealed to me and I got sucked up in it. That's probably the incest ship I like the most. (Though I've been out of the fandom for years, and don't keep up with the show anymore.)
I think I kind of shipped Ed and Al from FMA, but I didn't think of it as sexual as I do most ships. Later came Thor/Loki and I also like the thought of Wanda/Pietro (MCU) and Herc/Chuck (Pacific Rim).
Oh, and Kili/Fili from The Hobbit, River/Simon from Firefly, a couple things from Dead or Alive (Ayane/Hayate, Kasumi/Ayane, to a lesser extent Kasumi/Hayate), and a couple things from The Chronicles of Narnia. (Mostly Peter/Edmund and Peter/Susan.)
Plus that one ship from BioShock.
(TBH I'm sure I'm leaving things out... I have a lot of incest ships.)

Thor/Loki is frankly not overly healthy even without incest added in, what with Loki being a giant bag of dicks and manipulating Thor whenever he can. Again I like it for the mess it would create.
Nuada/Nuala, this one is almost canon imo, at least from Nuada's end, and much like Thor/Loki even without an incest reading it's a very unhealthy relationship. Nuada is extremely controlling of Nuala, even though he claims to love her and his love for her damns them both in the end. So once again, I like it for the mess.
Fili/Kili, this one is actually pretty healthy in the canon so I do feel a bit bad for shipping it, but for whatever reason it pinged for me and I could take a more handwavy 'these relationships happen with dwarves' approach or have it be treated as messy as it should be.
Wanda/Pietro, I ship them in most universes tbh, again because their relationship is pretty messy at times in the comics and Pietro really has a huge Big Brother complex. Plus they were canon for all of 5 mins in the Ultimates universe and that was kind of hilarious.
For me incest counts if they're related at all and adopted siblings definitely count for this imo(though if people want to tag it as pseudo-incest that's fine, but it shouldn't be untagged at all), I can't say what makes them appeal to me though, the fucked-upness of it I guess?
I think if someone wants to write an AU where they're not related that's fine, not my bag but idc, but as far as the canon goes trying to play it off as not incest, especially with adopted siblings, wont fly with me. Accept it and roll in the mess people, it's okay.

I'm not 100% positive but I think it probably started with reading Flowers in the Attic as a preteen. I guess that was my first incest ship, and I still shipped them in the recent movie series. I shipped various pairs of siblings on soap operas that I watched with my mom as a preteen/young teen, too.
I know there were some others after that but not anything I can remember right now (I know there were ones from different books). The next big ones I really remember are Michael/Linc from Prison Break and Sam/Dean from Supernatural which were right around the same time. Those two mainly for the crazy lengths they'd go to to protect/save each other. And let's see...Michael/GOB from Arrested Development, Fili/Kili from The Hobbit, Raleigh/Yancy from Pacific Rim (as brief as it was), Milo/Maggie from The Skeleton Key, Dexter/Deb from Dexter, Ian/Lip from Shameless, Sookie/Jason from True Blood (very slightly), Spencer/Melissa, Spencer/Jason, Ali/Jason, and Aria/Mike from Pretty Little Liars, Jaye/Aaron from Wonderfalls, Hank/Evan from Royal Pains, Gabby/Antonio from Chicago Fire/PD (though not so much anymore since she's annoying these days), Nate/David from Six Feet Under. Various pairs from different movies. And I'm probably still forgetting some because I have a ton.
Most recently I've (oddly) gotten really into Chin/Kono from Hawaii Five-0. (Odd because I've always been all about Steve/Danny when it comes to that show but I've been kind of meh on them lately...I was disappointed with the most recent big "shipper" episode and in general the writing for them hasn't been great IMO). Also, and this is embarrassing to admit I even watch the show, but lately I'm shipping the leads from The Grinder. Oh, and Angus and Mike from Code Black, potentially (they haven't shared many scenes so far since Mike hasn't been around long, but I could definitely see myself shipping it).

Even though she's still afraid that he wants to resurrect their Professor, he's a very needed source of support to her, and he's willing to be that. He's also willing to let her believe that he's dead-- he had no intention of returning to Keterburg after the fall of Akzeriuth, and only went because he had to. He probably figured she'd be better off without him.
I don't know, there's just a lot there, and it breaks my heart. Plus it'd be super hot, idec.

Connor/Haythem from Assassin's Creed. Which, to be honest, is the only incest "couple" I like.
Now, incest to me is mainly based on blood relation. If they're related by blood, it's incest. If they're not, it's not incest. Some circumstances can muddy that up a bit (Like older child adoption, step siblings, etc.) but it's still not incest to me.

Going through my major fandoms:
Baldur's Gate: Sarevok/Imoen - I once read a discussion about Bhaalspawn and incest that had David Gaider weigh in on it and the basic opinion was that two bhaalspawn with differeing mothers might not, on a genetic level, be siblings, with the only thing linking them being the divine taint.
I shipped these two in Throne of Bhaal, where Sarevok was changing his outlook (he canonically can change alignment as the result of certain dialogues), and after the end of the game where both of them have had the aforementioned taint removed and they are no longer bhaalspawn. So it's debatable how incestuous it counts as being, but I'm sure some fans will still say "Bhaalspawn are siblings! No exceptions!".
Dragonball Z: Goku/Gohan, Mirai Trunks/Mirai Bulma, Goku/Radditz - offhand those are the top ones I can think of.
Harry Potter: Weasleycest, with Fred/George the most common, a bit of Malfoycest, and one time I stumbled across a necrophilia Pottercest fic. More recently I read a fic where Harry was transported to a world where the child of James and Lily was a girl and ended up falling in love with her. It was handwaved away with something about their genetics not being exactly the same due to probabilities.
Lord of the Rings: Elladan/Elrohir, Thranduil/Legolas, Elrond/Elros, Maedhros/Maglor, Maedhris/Fingon, Fëanor/Fingolfin. One time I even found an Elrond/Arwen fic (it was all a Ring-induced bad dream though).
Final Fantasy VII: I don't think this fandom has much in the way of incest opportunities, to be honest.
Final Fantasy VIII: Laguna/Squall. Shipped that hard.
Transformers: Sideswipe/Sunstreaker was pretty popular so I read it a fair bit.
Doctor Who: Not much available here either?
SPN: It took me less than a month to start reading Wincest when I got into SPN.
The Hobbit: Fíli/Kíli happened, I tired of Thorin/Kíli fast though and wished there was more Thorin/Fíli instead. I still ship that in RP, plus my Silmaril characters consider themselves daughters of Fëanor yet that didn't stop Elenlossë marrying Maglor, or Kizár bonding with Anvari when he's related by adoption to her one way or another.
Dragon Age: The one place I feel gives a chance for incest is DA2, and I have read at least one Marian/Carver fic, possibly a Garrett/Bethany one somewhere along the line too.
