Something like wall sits and walks would build up the strength in your arms and legs first and help you learn how to balance. Then you learn the "hop" forms of handstands and cartwheels. Basically keep your knees bent and don't use as much force as you would if you were going all the way up or over.
Learning how to roll first is better too, because if you topple forward from a handstand you want to be able to tuck and roll so you don't backflop.
Adult beginner classes for gymnastics and ballet are pretty popular now.
