The beginning is slow, but I don't mind it. I think that maybe part of it is that since I know things only really start at Rivendell, all the time spent getting there seems like filler. But it also does make sense in terms of narrative.
I'm also remembering how different the movies are from the books, in some places - Merry was kind of shortchanged, wasn't he? He's absolutely not the comic relief, even if he has lighthearted moments.
And there are some really touching moments, too. I especially liked how when Frodo discovered his friends' conspiracy to leave with him, he had this moment of shattered trust - because even if they were conspiring to help him, they had still been spying on him and all.
Some things, like actually showing Gandalf's interaction with Saruman, were well done in the movie. And I'm not surprised they shortened the council at Rivendell XD

I think the mistake with Tom Bombadil is seeing him as this silly guy frolicking around the country and being whimsical, and not understanding his place within the universe. Because I thought he was a very interesting example of this great power who is also limited, and how the concerns of different parts of the world didn't always mesh. Even if Tom Bombadil was an example of an ultimately benevolent and helpful power, he just couldn't help with the War of the Ring. It's also the hobbits' first taste of just how big the world outside the shire is.
I was kind of bummed we didn't get a little more about Goldberry, actually.
