egg update

(Anonymous) 2018-04-08 09:01 pm (UTC)(link)
So, yesterday I managed my goal of baking a massive cake using an ostrich egg; got finished backing quite late, so I saved icing and eating for today and can now report:

1) it is not easy to get into an ostrich egg if you want to separate white nad yolk - sawing into it was kiiiinda like trying to saw through a china mug. But - after quite some time and frustration - I managed!
2) so very very very VERY much egg, and so VERY much yolk. Beating it was a super voluminous affair. made two large cakes, one fully dark chocolate, one a vanilla-sponge/chocolate swirl affair.
3) got finished backing late, so saved icing and eating for today. decided to layer both cakes together in an extravaganza of buttercream, and festoon with coconut and pine-nuts.
4) taste is pretty much indistinguishable from a cake made with hen's eggs, BUT:
5) texture is different - extremely dense, but not dry, in other words PERFECTLY amazing.

I'm overall extremely pleased with how it all turned out, and as a bonus, my massive cold did retreat enough for me to enjoy things!

So, that was me, feel free to share any culinary experiments you've made recently :D

Lol, how did you separate the yolk? I can't imagine doing it the way I do it with regular eggs (between the two halves, between the fingers, or water bottle).

To be honest, after I prized off the top part I'd sawn off, I pretty much used my fingers to reach in and hold back the massive yolk while pouring the white passed my fingers. Extreeeemely sloppy, but effective. The kids watching were equal parts impressed and totally disgusted.

To be fair to your kids, that does sound pretty gross!

well, the kid's aren't mine, but yeah, it certainly was a bit gross - worth it, though - and entertaining! We'll see how long it takes before their parents let 'em come for crazy project day again - especially now that I've delivered ridiculously rich cake to their families. I am an eccentric neighbor and mine is an evil laugh.

This was.........a ride lmao that sounds super cool.

Guess you threw away the shells? I'd probably keep them for shits and giggles.

Nah, wouldn't toss something that cool - the shells were given to the kids, who have some sort of magical lampshade project planned.

I highly recommend finding weird eggs and baking magic things (as if you couldn't tell ;) )

I had a friend come for Passover who eats only vegan and gluten-free food, and nothing sweet.

Basically I served him a bunch of vegetables but he seemed to enjoy them.

sometimes, it can be super difficult to do something "easy" without being boring - so go, you! yay, vegetables!

I forgot to say - I'm very impressed by your ostrich egg cake. I don't think I ever bake so much at once that I could use a whole ostrich egg.

Now I want to find an ostrich egg and make an enormous one-egg pavlova.

How did you estimate how much egg to put in the cakes?

Re: egg update

(Anonymous) 2018-04-09 08:00 am (UTC)(link)
NA

A large (chicken) egg is roughly 3 Tbsp (2 of white, 1 of yolk). By weight, the eggs that I've used range from about 46-54 grams.
