Anon who's been really hyper fixated on Bleach here.

A LOT of the volume poems. Besides certain changes, worse pacing, not as dynamic art, and the such, one thing the anime falls short on is it does not have is the poems/quotes the mangaka will put between chapters. They add depth to the ideas behind certain character motivations (and are usually portrayed with a small character panel that they might be applied to)
