That's near the beginning, and throughout the entire run he shows no interest in any girl, or girls in general, ever (as opposed to several other male characters who do). That's excellent fodder for headcanons about why he really felt the need to say he "liked girls."

It's not proof that he's not straight either. It is, in fact, a data point towards straightness.
You're right - sexual identity can be a journey. If there are other data points, like... never actually goes out with girls, or, spends a lot of time thinking about male friends' physicality, sure, we the audience can make some inferences. And that journey of exploration can be a fascinating thing.
But if the *only thing* we know about a character is a clear statement they make about their sexuality. Well. I'm going to assume that they are, in canon, intended to be what they say they are.
If we're talking shipping? Shipping is usually a little bit AU, so knock yourself out. But god. If we're trying to make a conclusion about what a character canonically *is?* What the author intended them to be? Then unambiguous statements they make about themselves are a place to start, not... some kind of inconvenience to be immediately ignored.
