This is my problem. I don't want to spend forever grinding in a game, but by the same token, if the game is too easy then I get bored with it and quit. I want a game that's challenging but that doesn't require a ton of grinding to make progress.

Yeah exactly.

I notice this especially in strategy games and RPGs. In the easy modes, you can just beat everything with barely any effort. On the other hand, in hard modes, it's like the AI is telepathically divining exactly what you want to do and specifically berserking their way to kill all of your guys as quickly as possible. Or there's a bunch of completely arbitrary challenges the game puts in your way to handcuff you.

It's very hard to find a balance! It's very hard to have a level of challenge that's fun without being grindy *and* that remains fun through the course of a whole game.

Exactly, and that's not what I want. Not wanting to have to spend two hours leveling up before I can even hope to go up against the next boss doesn't mean I want that boss to be easy when I do fight it, I would just prefer not to have to put in that two hours of grinding first.
