what's funny to me (not grating, just legitimately funny in its transparency) is when people really push for a "good, open minded fan unlike those wanky ones" cookie by claiming to be a multishipper when in reality what they ship is one pairing while vaguely supporting anything that keeps other characters out of the way of their otp.
eta: i'm always super surprised when i meet someone who ships "opposing" pairings. like ron/hermione AND harry/hermione, sam/dean AND dean/castiel, or zuko/katara AND katara/aang. it's incredibly rare.

What would make one a true multishipper, OP?
Having more than one ship?
Having more than one ship in the same fandom?
Having more than one ship with the same character, but only if you don't give one ship with them preference?
I just want every possible character in my fandom to want to be as hot for my fave as I am. Is that so wrong? Is that so wrong???

Actually, someone recently attempted to explain the Homestruck troll romance thingy to me, and since then I've been kinda curious to see if I can lay my shipping-Tony-Stark choices out on a quadrant (as I understand it, at least). Tony and Loki are kismeses, obviously. Pepper is either matesprit or moirail. Rhodey fluctuates all over the place, between morail and auspistice and matesprit. Bruce is either matesprit or moirail. JARVIS is auspistice. Natasha is somewhere between auspistice and moirail, depending on where he's catching her.
I've actually spent a rather alarming portion of the past few days wondering if you can do that for all your fandom bicycles. Like laying people out on Natasha's grid, either (Clint is moirail, almost definitely, Steve might be matesprit, Loki possibly kismesis, Bruce maybe auspistice, Fury auspictice too). Or Harry Dresden's (Murphy is moirail leaning towards matesprit, Marcone is kismesis, Billy and Georgia are auspistice, Susan was somewhere between matesprit and kismesis, Luccio was a moirail he wanted to be a matesprit). Or the Doctor (kismesis with the Master, obviously, moirail or auspistice with the Brigadier depending on regeneration, a series of matesprits and moirails across companions, auspistice with Barbara and Ian) ...
And yes, before actual Homestruck people point it out, I'm basing this on one rather garbled attempted explanation. But it's such a cool idea, this small galaxy of potential relationships that you can cluster around a character. Heh. Even as flawed of an idea of it as I've managed from that one conversation.
OT, yes, sorry. To the main secret ... I'm pretty sure I'm a multishipper? I mean, there are pairings I don't like for various reasons, but they don't usually have anything to do with other ships, but with either the characters in the ship (I'm really picky about enemyships or any ship likely to end in tragedy) or with fans' reactions to some ships (megaships give me hype aversion like you wouldn't believe). But short of that it just depends on if the characters interact well (or might possibly interact well if they happened to be in the same room/story/universe as each other).
If you pick a favourite character and then cycle pairings around them, how does that make you less of a multishipper?
