om nom nom

I made taco spaghetti for dinner last night. Spaghetti boiled in taco seasoning for half its cook time. That was kind of all I had in the cabinet, I'm going grocery shopping later.

Next time I make it I'm getting some lettuce and diced tomatoes, maybe some corn and canned chicken. Little glob of sour cream.

I am clearly a culinary genius.

What are your favorite weird/quick/comfort food kind of recipes?

Chili is my all-time favorite comfort food. Especially if I can splurge on a roast for it instead of hamburger.

And hamburger casserole: 3lbs potatoes, 1 lb ground beef, 1 white onion, 1 can each green beans and corn, 1 carrot, 2-3 cans of mushroom soup. Brown beef, boil potatoes, dump everything together and heat. Add a whole lot of pepper. Even better if you put it in the oven (with french onions on top!). OMG, best thing on a cold day.

That sounds super-tasty! I am totally gonna try this. Casseroles are always a good idea, since they can last a few days at a time.

Also, chili is the best. Cincinnati chili is my favorite!

What temperature do you set the oven at and for how long?

Sounds simple but tasty! My grandma makes a microwaved chicken and rice thing with peas and cream of chicken soup. Good and filling.

I'm bad at cooking. My cleverest recipe consists of tuna, cheese, and a sandwich maker.

I only recently took up cooking, but I'm getting better. Sandwiches are probably still my favorite though!

Comfort food is meat sauce and I'll eat it for days at a time.

Easy recipe is 2 cans of pilsbury crescent rolls, a bag of shredded cheese and meat cooked in taco seasoning.

Cook the meat first (I use ground beef). Spread one can of crescent rolls flat on a cookie sheet. Sprinkle half of the bag of cheese evenly, then add meat on top, then layer the rest of the cheese. Put the other can of crescent rolls on top. Cook about 10-15 minutes in the oven. Voila YUM!

I tend towards stir-frys with whatever random sauces I have left, generally with spinach and shrimp or tofu. I'm really bad about actually cooking vs. "fuck it, eating out is faster", so quick and easy is a major plus.

I'll also occasionally just grill like 4 zucchinis worth of slices and have that as my dinner. Because grilled zucchini is delicious.

My favorite "stuff I had in the pantry" stir-fry "sauce": Soy sauce, lime juice, brown sugar-based barbecue rub, and sesame seeds. Add soy sauce to the pan just until you can smell it, stir in, and repeat with the other ingredients in the listed order.

The only proper way to make sloppy joes with half sloppy joe seasoning and half taco seasoning (or 1/3 and 2/3). They are too sweet from the tomato paste otherwise.

My favorite comfort food type thing is pretty much any kind of crispy baked chicken. My favorite favorite is the "Italian oven dinner" which is a layer of thickly sliced potatoes, green peppers, canned whole tomatoes, garlic, and chunks of Italian sausage. Put some chicken legs on top, olive oil and S&P, then bake until delicious. So simple. So yummy.

Chicken and mashed potatoes. Delicious.

To make Lazy Zach Casserole, you take one four servings of Uncle Ben's white rice, and prepare as package directs. While boiling, take half a bag of broccoli (I use Walmart brand) and add on top of the rice. As tge rice cooks, the steam will cook the broccoli until it is nice and squishy. After the rice is done cooking, add a bag of cheese (usually cheddar) and stir all ingredients up well. Serves two.

Feel free to experiment with different cheeses, adding meats, other vegetables, or any flavors you wish to experiment with. I like to add sliced deli ham and chipotle Tabasco sauce.

My favorite comfort foods are my father's avgolemono soup and my aunt Mary's rice pudding.

Dad's soup also counts as quick because...he cheats. He starts with Progresso chicken and rice soup--well, actually, he starts with 2/3 cup of rice, cooked in 3 cups of broth, and when the rice is done, he adds two cans of chicken rice soup and, maybe, some diced cooked chicken. Then he juices a couple of lemons (maybe more, if they're not very juicy) and separates two eggs.

We always beat the egg whites to the soft-peak stage, then add the yolks; you probably don't have to make two steps of it, but that's how we've always done it. Then, slowly, add the lemon juice--and even more slowly, two cups of broth. The idea is to temper the eggs so they don't curdle when you add them to the pot and fold them in, which is what you do next, and then you cook it over very, very low heat until it is thick and custardy.

Best thing ever.

Swiss cheese/real mayo/raisin bread sandwich.

Honestly I don't know why I get such expressions of disgust when I make it because it's perfection on a plate. Fast, filling, all four food groups. What's not to love?

Spoonfuls of various spreads. Nutella, peanut butter, Biscoff, etc. Sometimes more savory stuff like hummus, cheddar dip, ranch dressing.

Lately I've added sriracha to the mix. Generally a squirt of it on either mayo or peanut butter. Sooooo tasty.

About once in every month or two, I would mix up condensed milk with Quaker Oats into this sticky mush that I eat to give a giant pick-me-up if I lost my energy for the day.

Bear in mind though that I usually drink ALOT of water after this, and I very rarely whip up this meal unless I have to.

When I worked building hiking trails, sometimes I would just dump oatmeal straight into my mouth and just chase it with lukewarm water. It worked pretty well as breakfast. (I'm not much of a breakfast fan.)

Grilled cheese sandwich. I tend to use spicy havarti because I like that extra little zing to my cheese and I usually add some sautéed mushrooms on top of it all. Because toasted bread + sautéed mushrooms = heaven.

Any kind of canned beans (rinsed) + one small shredded onion + olive oil + salt + pepper = salad.

Instant noodle omelette (cook & drain instant ramen w/seasoning mix, make omelette ordinary way but add noodles before the eggs).

(Pasta + any veggie equivalent to bacon/salt pork, diced & fried) + 1 egg, stirring until egg is cooked + salt + plenty of black pepper = not-even-close-to-real-pasta-carbonara.
