Things to do with eggs

A family friend who's a farmer gave us a crapload of eggs and I'm not sure what to do with them.

I'm gonna use a couple to bake a cake, put a few hardboiled ones in a potato salad, and maybe make some deviled eggs but beyond that I'm not sure. Maybe I'll make some scrambled ones but I'm not a huge egg person so I'm sure there are lots of good recipes with them that I don't know about.

Anyone have any suggestions? I'd hate for them to go to waste!

You can freeze eggs apparently. I only found this out a few months ago. Don't know if that helps? :)

Have an impromptu bake sale? Have a party with only baked goods as food? Get a bunch of people together and host a competition to see who can do the most creative thing with eggs?

Frittata! Make some frittata! It's great and tasty and you can use just about anything you feel like to put into it.

Also quiche is delicious but I feel like it's a lot more effort to make compared to fritatta. Also, egg salad maybe, if you're into egg salad? And all the usual standard egg things, like frying them up and putting them on burgers or pizza or what have you. Eggs is great.

Oooh, you could make egg salad if you like that kind of thing. Or make some mayonnaise for later use. Also seconding the bake sale. When we did these regularly in school, pancakes would always sell really really well and you can use a lot of egg for good results with the right recipes.

You should keep your shells, sterilize them (throw them in the oven while it preheats for something else you're cooking, or boil 'em for a few minutes), smash them up and mix it with some birdseed. Birds lose calcium from their bones when they lay eggs and eating shells and grit helps them regain it.

Angel food cake uses up eggs like no body's business. Um. So does baked french toast (which is also insanely delicious, 10/10, would recommend anyone eat it.) You could have a design-your-own omelet party. OH! You could pickle them. PICKLED EGGS ARE SO GOOD.

Lasagna? I use 1 or 2 eggs to smooth out the ricotta.

Do you have an ice cream maker? If you do, you should make ice cream. If you don't, you should get an ice cream maker and make ice cream. Also, meringues, cream puffs/eclairs, cookies, Swiss or Italian buttercream frosting for your cake... yeah, most of my suggestions are going to be baked goods. I don't really eat eggs as a food.

Oh! Homemade pasta. It's simple, if time-consuming, and super tasty. You don't even need a pasta machine, though it does go faster if you've got one. Also pancakes/French toast.

There are some brownie recipes that take five eggs to make.

My sister is an urban chicken farmer, so I've definitely dealt with the OMG SO MANY EGGS. Also, if you have coworkers, I'm sure one or two would be interested. Charge $2 a half dozen. More expensive than the store, but a lot of people like knowing what they're eating wasn't factory farmed, so they'll pay.

I personally would like to suggest French Toast.

I like my French Toast savoury, with Vegemite spread (thinly) on the bread before it gets soaked in the egg mix. Any savoury spread would probably go fine on it.

Angel Food Cake

Seriously, depending on the recipe 12 to 13 egg whites. This one is pretty good:

Chocolate Chip Angel Food Cake
Makes: 8 servings Prep: 40 mins Cook: 45 mins

Ingredients
3 ounces bittersweet or semisweet chocolate, coarsely chopped
1 cup cake flour
1 1/2 cups granulated sugar
13 large egg whites
1 teaspoon cream of tartar
1/4 teaspoon salt
1 1/2 teaspoons pure vanilla extract

Directions
Position a rack in the lower third of the oven and preheat the oven to 375 degrees . Pulse the chocolate in a food processor until finely ground; reserve. In a medium bowl, whisk together the flour and 3/4 cup of the sugar until combined; reserve.

In the bowl of a mixer fitted with a whisk, mix the egg whites, cream of tartar and salt on low speed until frothy, about 1 minute. Increase the speed to medium and beat the egg whites until they hold soft peaks, about 2 minutes. Stir in the remaining 3/4 cup of sugar, then beat the egg whites at medium-high speed until fluffy and just stiff. Remove the bowl from the mixer, sift one-third of the flour mixture over the egg whites and fold it in with a large spatula until just blended. Add the vanilla and fold in the remaining flour in 2 batches. Fold in the reserved ground chocolate and scrape the batter into a 10-inch tube pan. Bake until a toothpick inserted in the center comes out clean, about 45 minutes. Invert the pan and place the tube opening over the neck of a bottle to suspend the cake, then let cool completely, at least 1 hour and up to overnight.

You make a fucking pannukakku, that's what:

TOOLS
-One cast iron or oven-safe pan, bigger is likely to be better but as long as you can fit the ingredients in it really doesn't matter
-One additional sautee pan
-Oven

INGREDIENTS:
-4 eggs, beaten
-1/2 cup butter
-1 cup white sugar
-1 cup all-purpose flour
-1 teaspoon baking powder
-1 teaspoon salt
-2 cups milk

PROCEDURE:

1. Preheat oven to 425 degrees (F, don't know what that is in C sorry). Mix all the dry ingredients together. Add eggs and milk, mix until batter forms.
2. Put butter in the cast-iron/oven pan. Put pan in oven long enough to melt the butter completely. Remove pan, pour in batter, return to oven. Bake until knife inserted into center comes out clean (this is going to depend heavily on how big your pan is, so probably check it every 10 minutes or so, aiming for 20?
3. Serve hot or chilled. For additional deliciousness, add caramelized bananas as follows:

INGREDIENTS:
Bananas (more ripe is better)
Brown sugar
Butter
(as much as you want for all of these, frankly)
NB: I personally think that walnuts would be bitchin' if you add them in but have not actually tried it yet, so try it if you want I guess

Slice the bananas however you like. Grab your extra skillet, melt the butter, add sugar, then dump the banana slices in the pan and fry those bad boys (also the walnuts). You're done when they get nice and sticky and caramelly.

RESULT:
It's kind of like a really eggy cake almost? Wiki says it's a variant on a pancake, but you can definitely taste the difference.

Make avgolemono soup. It's chicken rice soup thickened with eggs and flavored with lots of lemon juice. You whip the egg whites, add the yolks, then temper them by slowly adding some of the hot broth. Pour the eggs back into the pot, along with the juice of 2-4 lemons (depending on how much soup you're making and how juicy the lemons are), put the heat way down, and cook it, stirring constantly, until it coats a spoon.

If you make an angel food cake, use the yolks for a semifreddo, which is a rich custard flavored with whatever you like (I've made strawberry, also coffee) and frozen in a mold.

Make a strata--basically, a savory bread pudding with layers of meats or veggies and cheeses between slices of buttered bread; you pour an egg-milk mixture over it and bake it.

You could also make flan.

Don't forget, the eggs aren't going to go bad in a week, or even two weeks. It's not like somebody gave you a crapload of asparagus.
