Re: Birthday. Cake.
I usually make something really stable and good with being frozen then thawed for the base (a sponge cake or something with a high fat content generally works best) and then I get the best ice cream possible and mix whatever I like into it. Some things I've done have been raspberries, blackberries, pistachios, hazelnuts, different candy bars... You could put anything in that you pleased, though.
Making a ganache to pour over at the last moment is totally optional, but recommended.

And happy (early) birthday! Hope you have a nice day! <3
Re: Birthday. Cake.
j/k I remember doing a thing on a birthday once to get chuckles out of someone by making a bit of a show of getting a McDonald apple pie, sticking a candle in it, and sitting alone at a table to eat it. It didn't make them laugh actually, but I get a kick out of performing exaggerated scenarios to make someone feel sad.
Re: Birthday. Cake.
I love yellow (lemon) cake with chocolate icing. Home-made, cream cheese, chocolate icing. My mom would make it with, of course, cream cheese and powdered sugar, but also a bit of butter (like a tablespoon) and condensed milk, because my dad used that in his coffee, so we always had some. You use bittersweet baking chocolate and add a touch of liquid (usually it was just leftover) coffee.
Trust me on this - i hate coffee, and you *do not taste it*. It just adds this richness to the icing. My mom always made a layer cake, and after a day or so, the whole cake was just...so wonderfully moist and rich and perfect (no refrigeration! That's a cake killer).
Enjoy your day!
Re: Birthday. Cake.
I heard a recipe, once, that I've always wanted to try, called (Almost) Better Than Sex Cake. What you do is take a chocolate cake, then poke holes in it and smother it with caramel sauce. Once the caramel sauce has soaked in, cover it with whipped topping, then drizzle chocolate sauce on top of it and then sprinkle the whole thing with toffee chips.
My grandmother actually used to do a similar thing, but with lemon cake and soaking it with lime Jell-o.
I suppose you could do something similar with alcohol, if you are inclined?
