Easy roasted vegetables

A bag of your favorite mixed veggies (personally I prefer the baby carrot-broccoli-cauliflower medley)

A couple tablespoons olive oil

Seasoning like Mrs. Dash

Mix all ingredients together until veg is evenly coated in oil and seasoning, place on a baking sheet. Roast at 400°F for 30 minutes, flip veggies once during roasting so caramelization can happen on all sides. Yummy!

Ceviche

1 pound shrimp, diced
2 cups lemon juice (or you can use some lime juice if you want)
1/2 cucumber, diced
2 tomatoes, diced
1 medium onion, diced
1/2 cup cilantro chopped (optional)
4 tablespoons tomato juice (you can add more if you choose)
4 tablespoons soy sauce (you can add more if you choose)
1-2 jalapeno peppers diced (optional)
Salt
Pepper

Directions:
Pour lemon juice into a bowl. Add the diced shrimp. Let it marinate for 20 minutes. Then add the tomato juice and soy sauce, which will stop the shrimp overcooking. Then add your vegetables. Dash of salt and pepper to taste. You can serve it by itself or on crackers.

Shrimp is so weird to me. It just starts out so ugly and gray and gross looking and becomes this pink little curl from heaven.

It does look weird. But it is so tasty. I love shrimp. Actually, I love most seafood. I'd pick seafood over any other kind of protein any day.

I'm fine with seafood as long as it doesn't look like it looked when it was alive. Filet that fish; cut up and deep-fry that octopus; if it still has a head, keep it the hell away from me.

Manwich Casserole
Brown hamburger in a can of Manwich.
Mix with cooked rice and cheese in a casserole dish
Top with more cheese
Bake.

Salsa Chicken
Chicken breasts and a jar of salsa in a crock pot
30 minutes before serving time, shred the chicken
And add a can of black beans and a can of corn and heat through.

Good on rice, in tortillas, by itself, wrapped up into crescent dough pinwheels, and -- I assume -- on salad or baked potatoes.

Corn casserole (a family favorite)

In a baking dish, mix:
- 1/2 to 3/4 box of Jiffy cornbread mix (depending on consistency preferences)
- 1 stick of melted butter
- 8 ounces of sour cream
- 1 can whole kernel corn (drained), 1 can creamed corn

Shake leftover Jiffy over the top
Bake for 45 minutes to an hour

the pasta dish I made tonight is good and very easy.

boil a box of bowtie pasta
put a pound of Italian sausage on a big skillet and cook until it's done, breaking it up into bite-sized pieces
while you do, chop up a couple bell peppers and like half a big onion
when the meat is done, take it off, add some olive oil and sautee the veggies
when the pasta's done, add a little butter or oil like you usually would and stir it, then put it in a big bowl and put all the goodies on top :)

I always use colorful peppers (red, orange, yellow) - they're fun and I think they're a little sweeter.

And yes, Parmesan cheese is a must!

Almond Butter Bites Dog Treats

-Get cookie sheet

-Put wax paper on cookie sheet

-Put little dollops of almond butter on wax paper

-Put a single blueberry (frozen or fresh) on each dollop

-Freeze until firm

-Share

Got it from a book on how to make safe homemade dog food(was an impulse buy when my dog got very sick). I'd assume people can eat them too. It's just two ingredients.

easy fudge
mix and melt together 3 cups semi sweet chocolate chips and 1 can sweetened condensed milk. add nuts if you want. leave in fridge till cold and firm.

If you use 16 oz semisweet chocolate and 2 oz dark chocolate, or just do what I do and use 18 oz bittersweet chocolate, and add--I think it was 1/4 tsp? of baking soda, with the sweetened condensed milk, it will firm up at room temperature without having to go in the fridge.

Even with all semisweet chocolate chips, it'll firm up at room temperature. I also add a pinch of salt and 1 tsp. vanilla extract stirred in at the end. No need to add baking soda.

1 cup sugar
1 cup water

Combine in saucepan. Bring to a simmer, stirring, until the sugar has completely dissolved. Store in the fridge.

It's a terrible pun! But yeah.

If you want it to be complicated syrup, add some herbs to the syrup when you remove it from the heat, and let them sit ~10 minutes before straining.

2 packages silken tofu, the kind that comes in a cardboard box and doesn't have to be refrigerated until you open it
A bag of chocolate chips. Or broken up chocolate bars.
Vanilla extract or mint oil or whatever flavoring you like in chocolate pudding.

Open the tofu and give it a quick rinse under the tap. Dump in a blender and whiz until it looks like vanilla pudding and not tofu, with no lumps. Melt the chocolate and add to the blender while it's running. Add some vanilla extract or whatever. Blend until it looks like chocolate pudding, because it is.

Pour in bowls or cups and chill until it sets up. It's a great way to freak out people who say they don't like tofu, especially if they love chocolate. You can top it with fruit and stuff, too, or put it in a chocolate cookie pie crust.

Easy vinegarette:

Olive oil
Red wine vinegar
oregano
garlic salt

Sprinkle the top of your salad with the dry ingredients, add enough olive oil to get everything a little shiny, add vinegar to taste (mixing as you go). More garlic salt if you need it. This has been the family salad dressing since at least the 1920s.

PMS Noodles

Spaghetti
Soy Sauce
Butter

Boil spaghetti, put in pan with some butter and soy sauce and stir-fry until the liquid is gone

Easy Miso Soup

8 cups water
1.5 tsp hon dashi granules
cubed tofu
wakame rehydrated in water
1/4c miso

Add everything but miso and bring to boil, scoop out some of the hot water and use it to dissolve the miso, turn off heat and pour miso in.
The recipe I use calls for 1tbs of dry wakame but I love that stuff so I usually do more like 3. Also I tend to make it a heaping 1/4th a cup.

No-bake peanut butter cookie-things

1 cup peanut butter (creamy)
1 cup light corn syrup (i've tried honey before but it wasn't quite the right thickness)
1 cup sugar
6 cups corn flakes

put peanut butter, syrup, and sugar in a large pot over medium heat...stir till it's all mixed together and the sugar's dissolved

Add the corn flakes stir until everything's coated. Drop spoonfuls onto a cookie sheet or wax paper or whatever floats your boat. Let cool. Eat ALL OF THEM
