Good bedsheets (300 ct and up!) and bath towels. They can be expensive but you use them so often it makes a big difference in your quality of life. Cookware/bakeware if you're into that? Craft supplies? Furniture or shelving to organize your stuff?

Small appliances - toaster, waffle maker, coffee maker, etc.(but only ones you think you'll actually use)
Towels, sheets, blankets
Storage bins
Subscription to something you like - magazine, food/drink of the month, etc.
New hobby starter kit
First aid or emergency preparedness kit

This year I just asked for cat stuff. Seems practical to me.

Uh, good bedsheets is a great idea. Some cooking thing you don't have. Maybe a waffle iron? I asked for that one year. A practical nonfiction book that is about something you want to learn. Or maybe a new cookbook. A soft fleece blanket to use on the couch while watching tv is something I got one year, and I use it almost daily.

Pajamas. My mom still gets me a set pretty much every year and it's awesome. Sometimes she gets me a dressing gown when my current one is getting a bit worn out.

My granddad used to order five bags of coal for every household of the family at the start of December (we all have coal fires). He'd get people something small for under the tree as well, but the coal was understood as his main Christmas gift for everyone. Sort of 'here's your annual starter kit for not dying of cold this winter'. In hindsight it was a really nice idea, and makes a surprising amount of difference.

What are some things you find yourself wishing you had (or had a better quality version of) but feel reluctant to spend money on?

Anything cooking-related?
Bedding or towels?
A vacuum?
Luggage?

Otherwise, there's always a gift certificate to some place where you can buy something like a lamp, or someplace where you can buy toilet paper or groceries. When I was in grad school and had no money, my parents would give me a gift card to the grocery store for my birthday. That sounds unexciting, but it was always for slightly more than I spent on groceries in a month, so I got a month of food for free with a little extra to treat myself, and that was wonderful.

In the past, I've asked for a decent toaster, good-quality kitchen knives, and a stock pot. I've also gotten a drip coffee maker, bed sheets, a blanket, a collapsible snow shovel to keep in the car, and extra bath towels, all of which were welcome.

Depends on what you need. New pajamas? Sheets, towels, boots? An electric kettle? One year I got my mom new windshield wipers because she needed them. My aunt lives on a canyon and is constantly at war with gophers, so I might get her an owl nest box this year because a family of barn owls can eat 70lbs of rodents a season. I bought a roommate a new microwave once. Subscriptions or memberships can be nice. I might get myself a zoo pass for the year, but Netflix or Amazon Prime or whatever you use would probably be good.

Bedsheets/towels are always a good shout for me. I always seem to need more, lol. Kitchen stuff like kettles/toasters etc., or quality cutlery if you're into cooking! I'm going through a phase of cute reusable shopping bags right now. They save so much money and you can get some really pretty ones. Places like Lush do some really nice giftsets of bath/shower stuff that can be both practical and pampering.

As a general rule at Christmas I just keep an eye out for family/friends who have recently broken/lost stuff. My dad insists that his 10 year old MP3 player is still good, even though the display doesn't work anymore so he navigates it by memory/luck. That thing is getting replaced this year if it kills me.

hand-crank AM/FM radio with built in flash light?
screwdriver set (the kind that comes with wrenches & pliers)?
CPR/First Aid training?
Rope?
Sewing kit?

Small appliances you use and need an upgrade on or might want to try - toasters, microwave, waffle maker, blender, food processor, electric kettle, rice cooker, instant pot, slow cooker, etc.

Seconded bed linens idea. A nice set of flannel sheets for winter can be sooooo nice when the cold weather sets in.

Subbscriptions: Amazon Prime, Netflix, Hulu are all obvious ones, but also consider food/cooking stuff like Blue Apron or there are various themed [theme] of the month type subscriptions now.
