I'm... sort of guilty of this. I was looking forward to some hot subtext between some characters, and even ran with it for a while. But when everything settled, I realized I enjoyed the fandom pairing as friends rather than lovers, even with all the subtext. (I did manage to write one fic about the pairing, oddly enough. I leave it up because other people seem to like both the pairing and the fic, so why the hell not.)

I had the opposite happen to me once, there was this really popular ship in my fandom and I followed someone who hated it because it was so ubiquitous so I felt like I had to not like it so I wouldn't make them mad/upset (lmao...) After a while I realised I didn't actually hate it that much and kinda liked it so I was like ah fuck it, I'll reblog that shippy fanart. who cares!

Anyway I hope you can learn to like what you like and not force yourself to enjoy things you don't care about! Maybe it'd help to just sit and think about what is and isn't appealing about different ships so you can figure out whether you'd actually enjoy it or not, to save yourself some time??

I can't do this. Either a pairing works for me or it doesn't. Although sometimes if I get into a fandom early as I'm absorbing a media for a first time it may color what ships I get into. But I don't get into ships just because they are popular. If something doesn't work for me, it doesn't matter if it is popular, I'm not going to ship it.

Like, when I got into Doctor Who for the first time, I started watching as series 4 of New Who was airing, but I started back with series 1. I got into it because of several livejournal friends who were into it, and they all shipped Doctor/Rose. So I expected to ship that. But when I got into the show, I very much didn't ship that pairing at all.

To be honest I think a lot of people think like you, that's why some pairings are juggernaut pairings or some characters are super loved despite not being all that great (I'm being nice here). I can't do that. I may start reading or watching something because a popular character or something naturally catches my eye, but I rarely happen to actually end up liking the thing that got me interested in a piece of media.

I've done someting similar a few times, where the most popular pairing or the people who ship it has annoyed me so much that I've started to spite-ship a competing pairing. It never lasts because my interest isn't genuine, but I guess at least I'm trying to find something to enjoy instead of focusing on how much I hate the popular pairing.
