Your secret is pretty benevolent in that light. As someone already pointed out, you hope these kids love these things the way you loved/still love them. You're paying it forward, but you're not trying to deny them the opportunity to enjoy something else.
And frankly, I think it's okay if a kid requests just a "stuff animal" and you give them Kermit. That would actually be pretty darn wonderful to unwrap. For anyone.

Do they just have you give whatever you want, or is it the kind where you take a tag and it'll say something like "clothes for five-year-old girl" or "a Barbie'?

They are taken to a big warehouse, and evenly distributed amongst the towns that need them the most. Then the underprivileged parents come into their local Salvation Army store, and pick out free gifts that they think their kids/family/etc will like. So instead of a stranger picking out a random gift for an underprivileged kid, it's the parents who get to choose what gifts they want to buy for their child. :)
