A cooking and baking thread!

I tried making peanut butter cookies using one of those easy "1 c. sugar, 1 c. peanut butter and an egg" recipes. They're not all that. And didn't get better when I added dark chocolate morsels. :(

What have been your culinary failures or successes of late, FS?

I've tried every variation of the "brownie in a mug" recipe on Tumblr. So far, they've all turned out to be chunks of coal in a mug or gooey mess in a cup. Never a brownie.

What really puzzles me is that I know a bitchin' brownie recipe that works wonderfully... just not in a mug. It's not rocket-science, but it has too many steps if you want to bake just one cup of it. Simplified recipes of brownies just end up as a waste of ingredients in my hands, but I'm too lazy to cook up a whole batch and I want a little snack, not a whole fucking tray :( *first world problems*

If anyone wants to recommend a recipe to me, they're more than welcome *sits at corner, sad and brownieless*

I've never had a successful mug cake/cookie/brownie either. I do have a very successful recipe for a small amount of cookies though!

2 tbs butter
2 tbs dark brown sugar
1 tbs sugar
pinch kosher salt
1/4 tsp vanilla
1 egg yolk (do not use a whole egg!)
1/4 tsp baking powder
1/4 cup AP flour
3-4 heaping tbs chocolate chips

Melt/soften butter in a microwave safe bowl. Blend butter, sugars, salt, and vanilla. Add egg yolk, soda, flour and stir. Mix in chips.

Roll into 2 large or 3 small cookies (or one giant cookie, really), bake in 350º oven for ~8-10 minutes or until edges are golden brown. Baking time will vary depending on how big your cookies are, just keep an eye on 'em.

ayrt ooooo thanks for the suggestion, that sounds tasty! But I have a question: what is AP flour? And is it baking powder, or baking soda? :( *non-English anon here*

As I have it in my country, there's 000 flour (less quality, used for bread, pizza, etc) and 0000 flour ('finer' somehow, used for cakes and the likes). And baking powder. Or flour that already has baking powder in it.

Ack, it's baking soda. Stupid typing.

AP flour is All-Purpose/plain flour, so probably 000. I think 0000 is what English-speakers would call cake flour.

ayrt thanks for clarifying that for me! I'll try it as soon as I can get to my oven :D I think I've got baking soda and as for the kosher salt... is there any specific reason it's 'kosher' or it's just lumpy-er salt? I mean, does the flavour change or it's just because its grains are bigger? (does that even make sense? :/ )

Kosher salt is a larger, coarser grain. If you only have fine table salt, use a bit less of it. You will get a change in flavor because for example 1 teaspoon of table salt has more grains = more salty than the same measurement of a larger grained salt.

All-Purpose flour. Baking powder and baking soda are different things from each other and flour.

ayrt thanks! I know baking powder =/= baking soda but I still have to add AP flour to my vocabulary :) silly me keeps forgetting and then remembering I shold remember it when I encounter it on a recipe.

I have a recipe for brownie in a mug that tastes like the brownies from the Swanson dinners. It's edible, but not nearly as good as my Jack and Coke brownies.

Microwave Chocolate Mug Brownie

This one worked pretty well for me.

Microwave Chocolate Mug Brownie

2 tablespoons butter, melted
2 tablespoons coffee (water or milk will work, but coffee gives it that little extra)
1/4 teaspoon vanilla extract
1 dash salt
4 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
4 tablespoons all-purpose flour

Directions:
In a 12 oz coffee mug, add water, butter, vanilla and dash of salt. Whisk well.

Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.

Microwave for 60 to 90 seconds. Center should be slightly molten. Careful not to overcook.

Enjoy with a spoon. Careful brownie will be hot.

Ooh, ooh. This is for cake, technically, but I HAVE tried this and it's delicious. (Fair warning - I used an actual ramekin, not a mug.)

Perfectly acceptable to use sugar instead of maple syrup or agave. (Vegan recipes often use these as a sugar substitute, since a lot of sugar in the States is processed with bone char. Sugar in Australia does NOT use bone char, so I'm free to just use regular caster sugar.)

It's actually super filling. I can make one and share it with my Mum, no problem.

A couple weeks ago I made cupcakes with Pepsi because I'd read about it and was curious how they'd turn out. They weren't quite as moist as they'd be with oil and eggs but were still pretty good!

I made banana bread yesterday and it turned out awesome.

Took me a couple of attempts to get double chocolate chip cookies right though. I still might need to tweak the recipe a bit, but they're improving! I'm not sure if it's using gluten-free flour to replace regular plain flour that's making the difference, though the banana bread worked out fine.

My roommates are out of town so I am eating all the things they don't like. :D

Tonight I basically had this http://www.vegetariantimes.com/recipe/thai-spicy-eggplant-with-sweet-basil/ but I added some bok choy and a few shrimp and ate it without rice.

Baking disasters; a few weeks ago I was making a dense chocolate almond cake for a party in a tearing hurry and it came out looking perfect, a bit too perfect, and it just didn't smell right, so I nommed on a flake from the edge of the crust and thus realised I'd forgotten to put any sugar in it.

That reminds me of the time my boyfriend and I made peppermint meringue kisses to give as Christmas presents to his family. We got gel food coloring to put down the sides of the piping bag so they'd be striped, and everything! Except I forgot to add the peppermint extract. So they were "festive holiday-colored meringue kisses" instead.

OMG YOU JUST REMINDED ME I HAVE GOAT IN THE FREEZER. MUST EAT.

I've only ever had palak paneer in microwaveable boxes...need to try eating the real thing sometime.

I tried making brownies with my usual recipe (they're supposed to turn out gooey and delicious inside and crispy on the outside).

But I think I might have converted from Fahrenheit to Celcius wrong, because they got burnt along the edges.

Also, I tried making peanut butter icing to go on top, but I used granulated sugar instead of icing sugar, so the icing was crunchy. (Also it was WAY too sweet, and this was after halving the 4 cups of sugar that the original recipe called for!)

What can I say, I was really exhausted that day. But the guests liked them; apparently they're delicious heated up so the icing goes all melty.

After four attempts. I've learned that you can't make a crispy banana cookie if you use actual bananas rather than imitation flavoring.

One recipe I always have to tweak is one box devil's food cake mix, one container cool whip, and one egg. I usually have to add flour to it otherwise it is way too sticky.

I pretty much bake every weekend, so a recent failure is Jack Daniels cupcakes that came out too strong. Success? Jack and coke brownies. I also love making homemade gingerbread, then the hosue semlls great.

I wanted to cook some sweet potatoes in a hurry, so I cut them up, dotted them with butter, and sprinkled on some cinnamon, nutmeg, ginger and pepper, and a little salt. Then I microwaved them. They were...not very good.
