I can't eat dairy anymore. Life isn't what it was.

Fuuuuck. I'm sorry that you can't have dairy, especialky ice cream or gelato, anymore. That wpuld be terrible.

How come?

I have stomach problems when I eat diary. Sometimes lactate pills help, but I've noticed I feel sick when I eat it now.

I don't know if I can stay away from ice cream... I love it so much.

(Anonymous) 2014-04-12 12:22 am (UTC)(link)
That's so terrible. :( have you gone to a doctor or specialist to make sure it isn't a serious health issue?

What a dillemma. I'm not sure if it would be worth getting sick over.

I'm in perfect health. I'm just diary sensitive.

I mean, it could pass (maybe?), so there might be hope for me in the future. But for now, I'm taking a diary free road.

That's good then. I thought it might have been something serious and was worried.

I hope that it does pass. :3

Is it just cow's milk or all forms of milk? If you haven't tried goat, I would recommend it. Goat's milk cheese is freakin' AWESOME!

I do have some goat's cheese in the fridge right now, but I haven't tried it yet since I noticed the correlation. Goat cheese is freakin' awesome. Especially the cranberry or blueberry kind. Yum.

Then try it. And if that works, try sheep's milk next. And there's always Buffalo mozzarella. It's different than cow's mozzarella. (Way creamier.) Maybe you won't get sick.

I don't like the taste of drinking goat/sheep milk, but in will look in to goat cheese. I never even thought of buffalo cheese! I'll give that a go as well if I can find it. Thanks.

If you like drinking chocolate milk then I recommend trying almond milk! (Can't vouch for the plain stuff since I don't drink it.) I switched off cow's milk to see if it would have any affect on my PMS and just kind of stuck with it because almond milk is delicious.

Oh wow, no, that just isn't right. I don't know what I'd eat if I couldn't eat dairy...

(Granted, I can't chug milk or even use regular milk in cereal because it makes me sick too, but almost anything with dairy in it is okay as long as I don't overdo it.)

I'm having a lot of coconut and almond milk instead. It's not the same... cereal doesn't taste as good tbh. Thankfully, I'm more of a water drinker, so that's one good thing.

(Lactate pills might help? They helped me in the past.)

Re: petty rant thread

I use almond milk in cereal, and 1% or 2% in everything else. It mostly works out that way and I've got so used to 1% and 2% milk that it tastes perfectly fine to me. ...I'd rather not have to use almond milk at all because I don't like the way it flavors the cereal, but...what can you do?

(I have tried those and they never helped much. Granted, it HAS been a long while so maybe it would be worth another try.)

Almond milk is definitely an acquired taste, especially since I drink that no sugared type. I do get the vanilla kind which helps a bit.

There is also lactate drops now that you can out into yogurt and milk as well. I did that for a bit and it helped.

I think I get the no sugared vanilla kind as well. It isn't terrible but I wouldn't use it if I didn't need to.

They have drops? Geez, I need to look this shit up. I can eat (most) yogurt fine, but for some reason milk by itself kills me.

Are lactose free things an option? (or was it something else in the dairy or just dairy?)

Is it just cow dairy or all dairy? Maybe you can branch out into goat milk/cheese/etc?

[personal profile] sootyowl 2014-04-12 03:53 am (UTC)(link)
That's what I'm trying to find out. I have had lactose free milk, but it still bothered my stomach.

I'm not sure yet. Up thread I was suggested goat and another type of cheese and I'm going to see if it affects me or not. I don't like goat milk tho :(

I'm sorry to hear that. :(

And I know you said you don't like almond milk all that much, but perhaps the difference wouldn't be as noticeable if you were to make handmade ice cream with it? Just incase the cravings get to be too much.

I actually made a coconut ice cream that was really good. Totally milk free too. I can't put almond ice cream in cereal and tea though, haha. I will see if I can make a good almond milk ice cream. I'm sure there has to be a few good recipes out there.

Would you like some substitutes? I've tried some, haven't tried others but have good recommendations, and I can give you a really, really good chocolate sorbet recipe (it's amazingly rich). Are you in North America, the UK, or somewhere else?

I would love some recs :) Mmm. I love chocolate and sobert. I'm in Canada. We get a lot of the same stuff as the US, but we may have different brands.

Ah, right! I'll recommend both North American and British brands, then. These are all vegan brands.

Tofutti: American brand. Probably their best products are their cream cheeses, which you would totally not be able to tell wasn't dairy. They also have cheese slices (I regularly eat the American style, they also have mozzarella), sour cream, ice cream, and they do have ricotta but I find the last to be quite unpleasant. There's also products like ravioli and pizza.

So Delicious Dairy Free: American company. MOST AMAZING ICE CREAMS. Their coconut milk Turtle Trails ice cream is to die for. They also have milks (both for drinking and cooking), creamers, and yogurts. Don't like almond milk? No problem, try cashew or coconut - they have unsweetened, regular, vanilla, the coconut range has chocolate and choc mint and pumpkin spice and nog and coffee ones... I really want to try the choc mint coconut milk :(

Daiya: American brand. I haven't had this one personally, but apparently it's one of the better American vegan cheeses.

Follow Your Heart: The other main American brand for cheeses, haven't had this one personally either. They're best known for Veganaise, as well as sauces and dips that would normally have cheese or egg in it, like caeser sauce or ranch dressing.

Earth Balance: American company, also haven't tried. They have butters (in tubs and sticks), soy milk, mayo, nut butters, spreads, and also snackfoods, like flavoured popcorn and kettle chips.

VBites Food: British company, they have the Cheezly range of cheeses (we use mozzarella style), although their main speciality are substitutes for meat and fish.

Another option is Whole Foods - there aren't a huge amount, but if you're in Vancouver, there's about four, and another four in Ontario (Oakville, Mississauga, Markham, and one in Toronto). They would most likely have their own vegan and dairy-free products - I know that similar stores, like Trader Joe's, have their house brands of things like soy and almond yogurt (I've had some of the Trader Joe's yogurts, they're delish).

But, quite aside from products, there's also homemade substitutes! Here are some, and some general tips:

- For recipes that call for butter, you can generally substitute things like oil (canola oil works best - olive oil has its own flavour that works intriguingly in some recipes, though).
- For buttermilk, take almost a cup of a milk substitute of your choice, like soy, and add a tablespoonfull of white vinegar or lemon juice. Let it react for a bit, and you have buttermilk.
- For cream, a great vegan staple is cashew cream - soak cashews overnight, then pulverise them in a blender with some water. If you have a high-speed one like a Vitamix, you don't need to soak them. You control the thickness with the amount of water you use.
- Another option to make things creamy is to puree silken tofu (the soft, wobbly kind) in a blender or food processor.
- To add a cheesey flavour to sauces and stuff, look for a product called nutritional yeast, should be available in all good health food stores. It's usually fortified with stuff like vitamin B12, too, which is always a good idea (and not just for vegans - 40% of ALL Americans have B12 deficiencies).
- For ricotta and feta and similar things, you can flavour and prepare firm tofu in various interesting ways.
- Milk substitutes aren't just limited to soy and almond. There's also coconut, rice, oat, quinoa, hazelnut, cashew... most nuts, in fact, you can make a milk out of. Almost all of these can be made at home, too - choose one that sounds interesting and just google... I don't know, 'hazelnut milk recipe'.
- Actually, as a rule of thumb, most dairy products can be replicated. A good way to do it is to google '[product/recipe/item] vegan', and you'll get a host of ways to do things. Vegan products are a good way to go, because that way you're guaranteed not to get things like casein and whey. A LOT of dairy reactions are due to casein, the main milk protein.
- Kosher products may work for you, too. I tend not to use them too often since they often have... say, egg, or fish-based gelatin, but they do have a lot of dairy-free stuff.
- The health food aisle in the supermarket will often have a lot of substitutes for milk products, including cookies and chocolates without milk in them.

And the chocolate sorbet recipe is this one. My Mum is the one who usually makes it, and she says to follow their instructions about beating and whisking, but you can play with the ingredients a bit (we use a vegan sub for milk chocolate, which is a little bit sweeter, although I personally like it quite bittersweet). The last step with the ice cream maker, though, isn't necessary, although it will be a bit harder without the machine. Still utterly delicious, rich, decadent, and just... perfect chocolate bliss, though <3

Best of luck!! :)

Thank you for these brands :) I've used a few and heard of others, but I'll keep my eyes peeled for the ones I haven't seen! I'm actually a vegetarian (I'm sorry, I should have mentioned that) and have used a lot of the things you mentioned instead of milk in recipes. I actually had cashew cream on my waffles this morning. Yum!

Thanks for the recipe! It looks delicious. I'll have to make it. My mouth is already watering in anticipation!

No problem :D It can be a bit of trial and error finding products you like (I was looking for cheeses just after I became vegan and discovered that Sheese is one of the worst-tasting products I've ever had the misfortune to put in my mouth, but Cheezly and Tofutti are fine for me), but when you do find one, they work great.

And let me know how the sorbet turns out! :)
