I've noticed a lot of Brits tend to prefer crispy crunchy cookies and a lot of Americans like soft chewy cookies. Maybe it's cultural.

I'm American and like both types.

(Also I always kind of thought biscuits were a type of cookie, though not all cookies were biscuits. The ones in the pic are what I would think of as biscuits.)

I don't know about that. I'm American and I like both. Plenty of Americans do, which is why we have recipes for both kinds of cookies.

I'm sitting here wondering how badly they must have screwed up to fuck up fruit pies. Flour, butter and/or shortening, and ice water and/or vodka for the crust, fruit, sugar, flour or quick-cooking tapioca for thickener, maybe some cinnamon or vanilla, and a bit of butter in the filling. How hard is that, once you know hoe to make piecrust?

I think they mostly made tarts rather than pied, and had ideas like American pies *had* to be single-crust.

I prefer chewy cookies/biscuits myself, but I always, 100% of the time drown the things in milk anyway, so maybe it's something like they eat them with tea and that makes the crispy cookies/biscuits softer??

idk man, this just makes me remember how confused I was the first time I read the scene where McGonagall offered Harry a biscuit and I thought she just kept Pillsbury biscuits in a tin in her office, like that was a normal thing to do.

I'm sure there us an actual definition. In regards to biscuits/cakes which I imagine would translate to the biscuit/cookie scenario, in regards to how they react when going stale? I'm sure someone could google it.
But as an Enligh lass I'd call cookies, cookies and biscuits biscuits. They're not the same thing. After all we have cookies here too...
