I don't know how to explain to people that I don't have any dreams for the future.
I've been depressed for most of my life, and I've failed at every major goal I've had in the last ten years. Where in all that am I going to find a "five year plan" or whatever?

I'm bisexual, and I'm embarrassed when other bisexuals (and pansexuals) get their pants in a bunch over the terms "gay relationship," "lesbian relationship," "straight relationship." It doesn't matter if one or both the people in it are bi or pan, those terms clearly describe the nature of the relationship itself, not the sexual orientation of the people in it. It's the easiest way to say those things. "Relationship between a lesbian and bisexual woman" or "relationship between a bisexual man and pansexual woman" is stupidly long. Get over it.

I made chimichurri egg salad, chicken, and apple cinnamon oatmeal muffins for my lunches this week.

Leftovers are the best lunch for me. So whatever I make for dinner, if I'm cooking for myself, I make a bit extra so I have enough for lunch.

Uh, chili is nice. Do it in the crockpot the day before and then bring it in a plastic container.

Does your work have a microwave?

Stir fry veggies (and meat if you want) and steamed rice. Reheats nicely.

cook chicken and then shred it into small pieces and use those to add to salads. I like doing salads for lunch, but they have to be interesting salads. There are lots of interesting things you can cook and then add to a salad. Fruit is also nice in a salad. You can even make your own dressing.

Get a rotisserie chicken and make chicken soup and chicken salad. That's two days lunch at least.

Muffins, both savoury and sweet. Blueberry muffins always turn out well for me. (5 minutes in the microwave; done.)

Pretty much anything you have for dinner? Like - cook up some chicken (or get rotisserie chicken) and add it to steamed veggies, or au gratin potatoes, or, yes, pasta. Same with beef. Veggie fried rice with either meat. Toast up bread, bring meats and cheeses separate (so the bread doesn't get soggy), heat them together for a half a minute and you've got a nice toasted sandwich.

Soup of all kinds with garlic bread or rolls or toasted sandwich.

I dunno if you care about having a huge variety - i eat the same thing for lunch all week.

Like others have mentioned, I find it's easiest to pack leftovers from dinner, so I cook with that in mind. If you haven't already done so, consider investing in a good-sized insulated lunch bag, reusable ice packs and some sturdy plastic containers, it'll expand your options a lot. A small thermos will help if you want to bring soups and stews.

Other suggestions:

quesadillas with whatever filling you want
adult Lunchables - cheese, cold cuts, crackers, maybe with a hard boiled egg or some nuts for extra protein, or some carrots and hummus.
tuna/egg/chicken/ham salad and crackers, if the smell won't bother your co-workers

On weekends, I browse budgetbytes.com and choose a recipe to make for the week's lunches, get groceries, make the lunch thing, and pack it up in individual portions.

Back when I put more effort into making dinner most nights, I would just make two servings and pack up one for lunch the next day.
