Is it blatantly hypocritical of her? Yes, obviously. Is it an uncommon kind of hypocrisy? No, I don't think so, and frankly, if you reversed it (so that she shipped m/m and didn't ship f/f), I don't think it would even be notable or rare.

Agreed! Though I don't actually ship them romantically, I absolutely understand why people do in ANY & EVERY VERSION. Holmes/Watson are definitely soul mates, whether platonically or romantically.

I've seen this done with the Qinghe Nie sect and it's... really weird and feels a little racist. I don't know the reasoning behind it, though.
