Looking For Fairly Cheap/Easy Vegetable Dishes

As the title says. I need more veg in my diet.

Dishes can also have meat in them; they don't have to be vegetarian. As long as vegetables are a prominent aspect of the dish.

Blandness is the main DNW.

Stir-fry broccoli is one of my favorites. I make it with a little garlic and a sweet sauce (brown sugar, soy sauce, corn starch for thickness, red pepper flakes). Takes about 15 minutes and it's really tasty.

honestly, what got me to add more veg to my diet wasn't looking specicially for veg-heavy dishes, but just what I could an extra ingredient or two to, and cook it correctly so that it tastes good. e.g., roasting for broccoli, asparagus, etc.

roasting is a fucking game-changer. gone are the days of bland vegetables steamed or boiled (ugh) and unseasoned. A very small amount of healthy-ish olive oil and genuine seasonings, like pepper, garlic powder, etc, takes vegetables from gross to amazing. roasting some broccoli and peppers as a side dish with a cut of any meat? perfect. Mixing roasted veg with potatoes? Absolutely. I'm at the point where my go-to lazy dish is stir-fry, because you can quickly sautee any meat with any number of vegetables and it's probably healthier and tastier than most fancy dishes that need a sauce to taste better. So, adding one extra veg for variety means I'm suddenly eating a dish that's 75 percent veg - carrots, celery, and broccoli with fresh garlic and onions and ginger root, filling me up with fiber and nutrients along with a sliver or two of pork or chicken and rice.

In my urge to eat less process/pre-made/canned/jarred food I learned very quickly that the two biggest problems with not liking vegetables are how they're cooked and how they're seasoned. I grew up with vegetables either being candied and sugared to shit or steamed with zero seasoning, it's no wonder I didn't know that vegetables could be fucking delicious so long as you're cooking them correctly and not boiling or steaming them to death.

that said, mad props to Japanese style quick-pickling for almost any veg. Pickled daikon + carrot or cucumber or both = amazeballs.

I am hopping on to share my own problem and not to give you advice, sorry - but my problem with vegetables is the shopping. It feels like vegetables aren't worth eating more than 2 or 3 days at most after purchase because they're not fresh and they get gross. So if I go to the store once a week and buy vegetables, I'll cook and eat vegetables the next night or the night after, and then I won't have vegetables the rest of the week. And frankly I'd prefer to go to the store less than once a week.

I just don't understand how people make vegetables a regular part of the diet. Don't get it at all.

Roasted mixed veg. Get some veg, any sort, dice it, put it in a casserole dish with a little oil and some salt and paprika, roast the hell out of it for forty five minutes at 200C.

Do the 'spaghetti squash in place of spaghetti/pasta' thing - it's super easy, makes a lot (for one person), tastes good, and is better for you than flour-based pasta. All you gotta do is roast the halved squash in the oven for about half an hour, then scrap out the 'flesh' (it comes out like noodles, so cool!).

You can store it in the fridge or freeze it in serving batches, re-heat in a pan with whatever meat you're eating/sauce. Tasty stuff!

You can roast carrots, Brussels sprouts (cut them in half and lay them on your roasting pan cut side down so they caramelize), broccoli and cauliflower (cut the florets like the sprouts for caramelization), broccolini, asparagus, mushrooms, and butternut and acorn squash (I love these last two with a little butter, brown sugar, and cinnamon in the winter). Just wash the veg and trim them to pieces roughly the same size (one or two bites for things like cauliflower and broccoli, and the stems can be cut and roasted too), toss with a tablespoon or two of olive oil and some salt and pepper, and there are so many kinds of seasonings you can use that you're practically unlimited. I like to use garlic powder and onion powder on my roast vegetables as they also lend a tremendous amount of flavor. Pour the vegetables out onto a sheet pan and spread them in an even layer, then roast at 400°F for a half hour, turning the vegetables over after 20 minutes. Increase the oven temp if you don't get the browning and caramelization you want. I prefer crisp-tender vegetables, but you can add time to their roasting if you like softer veg.

Most pasta dishes can have steamed or boiled veggies added with the pasta sauce with no decernable difference in taste.

Also stuff veggies into sauces.

Black bean and corn salad

(Please note you can add quinoa or other grains to this to replace rice)

Can of black beans
Can of corn (i personally like sweet golden corn)
Cilantro (chopped)
Tomatoes (cherry, grape, Roma, heirloom, whatever) chopped or however (diced etc.)
Red onion (chopped)
Lime/lime juice

Mix at all together and it's soooo tasty!
