Oatmeal time

[personal profile] neonlovechicken 2014-05-18 08:39 pm (UTC)(link)
So, I bought some oats for the first time today and made my very own oatmeal/porridge. I know this must be very relevant to all of you so I thought I'd share.

Serious question though. Since in my country oatmeal isn't really a thing, I was wondering if any of you know of any cool recipes? I just cooked it with half milk/half water and salt, then added yogurt and honey.

I must say it tasted very good, but I'm wondering now what I can do with it!

I don't know about recipes, but I cook mine with a little over half coconut or almond milk and water. I add frozen peaches or fresh green apples mostly, which I boil with the milk/water, then add the oats and cinnamon. When it's almost done (maybe like a few more minutes of cooking left) I add nuts and honey (if I'm using soft fresh fruit like berries I add them here). After I put it in the bowl I add a bit more milk and honey. Sometimes instead of honey I use sweet potato butter, apple butter or jam which I add after I put in it in the bowl. I've seen people use peanut butter, but I don't like peanut butter.

Ah so you do boil the fruit with the oats? I had thought of adding fresh fruit after, but I thought the taste wouldn't mix well enough. I'll totally try it out the way you do it!

Oh god, after my whole life reading and watching movies about people eating oatmeal and wondering what the heck it is I finally made the big step. :D

Put about a half cup of your raw oats into a sealable container, then add an equal or greater amount of a plain yoghurt (vanilla, greek, natural, etc) to it and mix well. Seal the container and leave it in the fridge for at least overnight. In the morning take it out, stir in some berries or other fruit, nuts, plus honey if you need sweetness, and you have "bircher" muesli.

If you like oats hot, I cook equal amounts of oats and water until nice and mealy, then stir in half a grated apple, top with a spoonful of yoghurt for creaminess, and dust over with cinnamon.

This bircher muesli thing sounds awesome. And in the morning it would definitely work better, because there's no way I'm waking up even 10 minutes before I have to to cook oatmeal... and I hadn't thought of using cinnamon either, but I see it's a popular choice.

I think I'm going to prepare it tonight for tomorrow. :D

anything

literally anything

do not limit yourself to the homemade versions of the packet flavours anon

like raisins and brown sugar ? better with fresh raisins and extra butter added - better X 2 with dried cranberries/blueberries/other fruit

fresh fruit also (add after cooking obvs.) like peaches and cream ? better to use canned (yeah yeah) peaches but you can use real cream (or non-dairy subsitute)

banana nut is my go-to -- mash banana with a fork, get whatever kind of nuts you like, drop them in a zipper bag, smash on counter to get the bits, mix all ingredients, add a dollop of honey

can also add nutella / cocoa / whatever else you want

your options are limitless anon

Woo-hoo, nutella and cocoa is my to-go combo when I make crepes. It could def work.

BUT GOOD GOD THE COMBINATIONS ARE ENDLESS... I'll gain a million pounds in 2 months, I know already. I always do this with new food I try, I just have to eat it and ONLY IT for months until I get sick of it...

I use a brand from Love Grown Foods that has oats, chia and nuts in it. I just add water but cook it in the microwave at half power (if it's at full you risk oatmeal spill over and you have to clean up the oatmeal you wanted to eat!). I'll just a little dark cocoa powder, maple syrup and greek yogurt. Makes for a filling tasty meal! Sometimes instead of adding the cocoa I'll add some fruit or preserves. No maple syrup. It's tasty too!

I'm always suspicious of the cocoa/jogurt combo, I've eaten some cocoa flavored yogurts that tasted terrible, but probably mixing it with the oatmeal and the yogurt will work. :D Also nuts, yeah.

So you use water to cook it but then add yogurt, I suppose that works too, probably milk+yogurt is a bit overkill? I do love how it tastes though, but then I live on milk+cereal...

I wish we had brands that sell this kind of thing, we only have stuff that goes with cold milk... because here this stuff is not cooked that I know of. In fact it took me quite a while to find the oats at all.

Granola

2 1/2 cups rolled oats
1 cup shredded coconut
1 cup pecans*
1 cup pistachios*
1/2 cup brown sugar
1/3 cup maple syrup
1/3 cup butter
1 teaspoon salt
*Or whichever type of nut you prefer.

Mix the rolled oats, coconut, and nuts in a large bowl.

In a saucepan, heat the brown sugar, maple syrup, and butter until the sugar and butter have melted, around 2 to 3 minutes. (You can also use a heat-proof bowl in the microwave for about 1 minute.)Remove the brown sugar/maple syrup from the heat and add the salt. Pour this over the rolled oats mixture and mix until well combined.

Line a baking sheet with parchment paper and spread the granola over it. Bake in a pre-heated 300F oven for 30 to 40 minutes until golden and the mixture has dried. Stir the granola every 10 minutes or so while baking. Allow to cool and store.

Holy shit.

And btw, I now need to hunt down some maple syrup, which I've only tasted once many years ago. This sounds delicious and I'm so weak.

THANK YOU

I make mine just with milk and add sugar and cinnamon after it's done. I wasn't aware that people used water to cook it; that sounds less yummy. :/

I love oatmeal and eat it more or less every day for breakfast.

I usually just boil oats in water, and then mix in what I feel like - brown sugar, fresh berries, dried fruit, etc.

Oatmeal is delicious with fruit (like fresh berries) and also with cinnamon and nutmeg. Oh, and some people like to put nuts in it.

I always add brown sugar and raisins to mine. Only way I'll eat raisins which I usually don't like. Oats are also nice in cookies.

I admit to making peanut butter and jelly oatmeal. I usually boil the oats with water then add the peanut butter (any kind will work, but I've used honey peanut butter) and whatever fruit spread I happen to buy that week. Pomegranate jelly is probably my favorite. The problem with it is the peanut butter can be a bit thick and may not spread evenly. I personally don't mind it clumping up but my try adding the peanut butter at various stages to see if I can thin it out a little.

I do savory sometimes. Mostly, it's stirring in leftover salmon that's previously been cooked with some combo of olive oil, onion, green onion, garlic/ginger, soy sauce/oyster sauce, maybe a leafy green. It's based off the congee (rice porridge) dishes my family would occasionally have at home; I think recipes for those would generally cross over well to oatmeal!

I also cook the oats with just water and a bit of salt.

I generally use quick oats (nothing weird about them, they're just cut smaller so they cook faster) because... they cook in like a minute, but oh man, the possibilities are endless.

Liquids! I don't drink dairy milk, but man, that does not limit you at all. Almond milk has a faint nutty taste. Ditto hazelnut milk! Oat milk for, like, porridge squared. Coconut is good! Chocolate soy milk, just to ramp things up ;D And some fruit juices might work, I think? Add-ins... anything. Obviously, for fruits, bananas are a good choice, berries (frozen works fine, too!), apple (cut these ones smaller, since they're harder), pears, stone fruits like peaches and apricots and plums, grapes, cherries, oranges/mandarines... anything. Dried fruit, too - dried cranberries, dried apricots, raisins, whatever you want. Sweeteners! Huge amount of choices - I don't use honey, but do have a good substitute for it, and maple syrup goes down an absolute treat. Chocolate sauce? Chocolate sauce might be neat. Fruit purees, maybe? Or a fruit compote! Stewed fruit? And then you have chopped nuts (maybe caramelised, oh man that'd be good), seeds, cacao nibs, a whole range of yummy things to mix in. You can also mix in cocoa powder, brown sugar, maybe peanut butter or another nut butter, dessicated coconut or coconut flakes... Jam/jelly?

My main go-to ones are:

a) Keeping it fairly simple, with sliced bananas, maple syrup, and cinnamon,

b) The healthy one, with sliced bananas, dried cranberries and apricots (diced), and mixed nuts and seeds (I currently have a mix of pecan pieces, slivered almonds, pumpkin seeds, sunflower seeds and flax seeds), and

c) The let's-ramp-this-the-fuck-up, with sliced bananas, cocoa powder, brown sugar, and peanut butter (or another nut butter).

I like sliced bananas, heh.

I also just thought of the 'this is technically dessert' one, with chocolate milk, cocoa powder and sugar, chocolate syrup, and choc chips. Oh dear. Don't have that one too often.

My favorite thing for breakfast oatmeal is to add a little bit less water than recommended - so instead of 1c oats, 3/4c water, I do about 1/2-2/3c water. It makes a more solid patty of oatmeal, so if you turn the bowl upside-down it all falls out in one sticky clump, vs. spreading out all our you plate. The texture is nice and smooth. You really only have to cook the oatmeal, and add things on top. I usually put my fruit in after it's cooked, because I like the contrast in temperature. The savories, you can decide on your own.

Sweet:
milk (soy/almond/etc)
butter
frozen berries (blueberries or raspberries are best, just because frozen strawberries are HUGE)
pecans, walnuts
fresh strawberries/bananas/peaches (yellow or white)/apples; basically any fruit you can think of, fresh, frozen, or dried!
cinnamon and/or nutmeg
honey, syrup-agave/maple, brown sugar

Savory:
butter
sausage
bacon
basil
thyme
rosemary
sausage and gravy (gives it a "biscuits and gravy" flavor)

You can also do a 1x1 with quinoa, cooked extra long to match the consistency of oatmeal.

ALSO:

Cookies!!!! Soak the oats in water for about ten minutes (you can nuke 'em for a minute, or not, at your discretion). They blend right in to the mix. If you do that, I recommend about a 1x1 ratio to flour, meaning you'll either make a double recipe, or knock half the flour off your recipe. They add just a little bit more Good Stuff to your cookies, and that hint of protein. And if you're making breakfast cookies, it's like having a bowl of oatmeal in your hands.

Cakes

Pie crusts

Experiment! Have fun with it! I'd loved to hear what you like best. ^^

lol, I guess I'm boring. My go-to recipes are:

Steel-cut oats (1 serving according to package directions; I use Bob's Red Mill); 1 apple, diced small, cooked along with the oats (length of time depends on how crunchy you like your apple). Brown sugar, cinnamon, some chopped walnuts, and half and half on top.

Steel-cut oats; sliced bananas; cinnamon, chopped walnuts, brown sugar (or maple syrup) and half and half on top.
