bagels... help

Trying to make bagels. Last batch were disappointing. Followed a recipe, did the whole rising, forming, rising again, boiling, baking thing. And they turn out kind of ... meh. So I read up online and everyone seems to have a different idea about what belongs in the water to make it perfect. Either nothing, or salt, or malt, or honey, or baking soda, or lye, or the tears of an elder god. And every recipe talks like theirs is the source of the one true crush and all others are false idols.
Since I don't want to make ten thousand batches... thought I'd just ask here: those of you who bake yer own bagels: *what's in your poaching water*?

I use honey for mine. I've heard barley malt syrup is better but it's harder to find, so honey it is. I think they turned out pretty good, I liked them anyway.

Things you like in genres you don't

Are there things that you really like in genres you usually dislike?


I generally don't do comedies. previously HIMYM was the only comedy tv show I was into. But I watched the premier of Animal Control, and I really liked it. Genuinely funny, characters interesting, and had heart.

Also, I may have to go check out some of Joel McHale's other stuff.

Rivers of London, it is first person narration in the copaganda/urban fantasy genre. All things I hate, but I do enjoy the books.

I normally don't like sports anime but I loved Giant Killing. Having the leads be actual adults in league play just made things more exciting for me because I genuinely couldn't guess if the team would win any given game, which for me is more exciting than yet another high school tournament team where you can generally guess who's going to win based on the narrative (if it's the seniors last year and the main characters have a big rivalry with team A they are absolutely not going to lose to just-introduced team B in the first round so why are we spending three episodes on it).

Hate sitcoms and romcoms and show that trip my embarrassment squick but loved Selfie. John Cho and Karen Gillan were just perfection, and all the side characters were fabulous too, especially as they gained more depth over the single season it had. (Da'Vine Joy Randolph in particular.) The first 10 minutes of the first episode were...not great for me but the person who recced it to me also had an embarrassment squick so I kept on and after that it was fantastic.

probably going to get yelled at here but here goes. I hate anime except for Shin Chan and Aggretsuko which I like a lot. I also like ATLA but I've been told it's not really anime.

... but you wouldn't mind if someone else made them for you! As always, including the fandom and full character names is a big help, and I'll try my best to use an appropriate image choice. Just to clarify - it's my intention to make all the secrets left in this thread, so even if they're not marked claimed, they will be made.

I think the Star Trek Voyager episodes Fair Haven and Spirit Folk are so bad that I'm not entirely sure that I couldn't genuinely make a case for them to be counted as Hate Speech under anti-sectarianism laws. At least Threshold was only bad TV, it wasn't borderline criminally offensive.

I love fan theories when they are actual serious considerations of canon possibility. But I hate it when people don't know the difference between crack and serious theories. It drives me up a wall how serious the Star Wars fandom takes the Darth Jar Jar theory. Is it a funny idea? Yes. But is there even a tiny fraction of a possibility it is real? Fuck no.

The best thing about Pratchett fandom was that alt.fan.pratchett was filled with people and discussions on all sorts of academic subjects, I swear I learned more there than at school. Why is there no fandom like that anymore?

Picard S3 is just more post 9/11 bullshit. Say what you like abut S2, but at least it tried to be more like the original show. I am so fucking sick of the rest of modern Trek's love affair with dystopianism.

I don't like the ship designs in modern Star Trek they are all too sharp angles and blocky for my tastes. I prefer the smooth swooping lines and circles of previous eras. And I'm not fan of all the blue tinged lights too.

I really wish there would be shows like MCU's What If, but for other fandoms. Star Wars, Star Trek, Supernatural, anything really. I just love the idea.

I don't have a problem with the Roald Dahl estate editing his books to be a little less vicious in certain areas, tastes DO change. I just wish there existed some tech to make the man himself's life be a little less awful towards Jewish people. I hated learning he was such a raging antisemite.

I hope the producers of the Dungeons and Dragons:Honor Among Thieves movie are serious when they say there is no meta, no playing with the fourth wall, in it. Because I am so sick of movies and tv shows constantly reminding me they are fictional and that some of the stuff in them is silly. I already know this, the characters should find it all real though. Enough with the fucking meta jokes! (Deadpool and She-Hulk excluded, obvs)

I really hope 13 gets brought back for a special in the future. I'd love to see how another showrunner would write her. Not that I hate Chibnall's stuff (other than the Timeless Child change which sucked). I just want someone else to get a go at her because I adore her.

I hate that nobody can ever seem to sum up Captain Sisko without also shitting on Picard to do it. Come on, Deep Space Nine fans, either stop being lazy in your descriptions or stop being assholes about TNG. Describe your captain in his own terms, not in relation to anyone else.

True Crime Opinions – General

Inspired by yesterday’s thread. Post any thoughts you have about anything true crime related, mine below.

I'm interested in true crime, but I don’t understand how ‘Love and Death’ got made. I mean, they already had ‘Candy’ based on the same case just last year and I don’t really understand how that got made, either. I know it hits all kinds of salacious vibes, but it seems like a killer got away with a gruesome and violent murder (of her supposed friend, the wife of the man she was committing adultery with) and the narratives seem sort of okay with that. So, it feels like family of the murder victim is being victimized again. Maybe I’m missing something.

Super late tech vent

So my ancient iphone has been dying for awhile now. My computer that's old enough to vote is completely dead. Tonight my phone is seemingly in its actual death throes, but I bought a used newer iphone off a coworker awhile ago.

And none of my backups will actually finish saving to the new to me phone from my icloud storage. Phone to phone transfer failed back when my old phone was still semi functional.

I couldn't back up to a computer because a) mine's dead b) I'm poor and can't afford a new one, and now it may be too late. I can use this phone even though it never finished backing up, but I can't run software updates or anything until the backup finishes, which it won't; it's been months.

Took it and the old phone to the apple store a couple months ago; they did exactly what my coworker and I did to just as much effect.

I can just stop the backup and lose my data that hasn't transfered, I guess. It's a lot of my books, including (not pirated, legit purchased) books not from the apple store and fanfic deleted from Ao3 I have no other backups for, as well as a handful that I purchased from ibooks that are no longer available in the US. i guess I'll just figure out how to pirate all of the revoked license stuff. If I had a desktop I'd start by downloading Calibre.

I'm so mad at myself for so rarely backing up data from my ancient computer (in the days before cloud storage) and losing tons of photos and stuff, but I'm even angrier that I actually backed up my phone for years and still stand to lose so much.

I'm extra glad for my physical media collections rn though.
