Characters falling in love

For a getting-together-type story where 2 characters meet for the first time in the fic, what would need to happen in the story for you to believe that they've fallen in love and it wasn't love at first sight?

Do you need only one really heart-felt conversation? Do they need to spend a good amount of quality time together getting to know each other (and how much time is that)? If the story took place over three days but it was really long so it felt like they'd spent longer time together, would that feel sufficient? Conversely, if the story was really short but took place over months, would that work for you?
